Chicken with Quinoa and Veggies

We thought this was delicious...can't wait to have leftovers for lunch tomorrow. I usually try to follow a recipe pretty closely the first time I try something but I did make a few changes. Firstly, I always toast my quinoa slightly and then rinse before cooking. I had no idea what garlic scapes were so just used some minced garlic. I used only about a quarter of onion and no tomatoes due to family preference and increased the zucchini and basil. I also used a rotisserie chicken because I was so short on time and then tossed in some toasted pine nuts. This is a great base recipe and could be modified in so many ways to suit your tastes.

Easy Chicken Fajita Soup

Corn Tortilla Quiche

Really good, however, was really hard to cut the crust. Used fat-free 1/2&1/2 in place of some of the cream and had to use one extra tortilla to overlap. Cooked extra time before center was set.

Lemon Basil Pesto Flat Iron Steak

My family really liked these. As per another reviewers suggestion I think cooking on a broiler pan would be great as they were sitting in alot of grease. Sauce was great...just the right amount of kick.

The Best Rolled Sugar Cookies

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

My family enjoyed this and it was a nice change of pace from the regular chili. I too added a can of green chiles and some garlic. I added extra broth initially so it was really watery at the end but once I shredded the pork a little bit it absorbed all the juice and thickened right up.

Chicken Tikka Masala

This turned out really good but thankfully I read the reviews before hand. Way too much salt. I reduced it considerably, 1/2 tsp in marinade and 1/2 tsp in sauce and that was plenty for us.

Southern Potato Salad

Get compliments whenever I make this. I have doubled and tripled the recipe for large groups and I usually serve cold. Don't add celery and I use dill relish instead of sweet but those are just personal preferences.

No Bake Peanut Butter Pie

Oklahoma Brisket

We didn't make the BBQ sauce but the brisket came out really good. We had a 8lb brisket. We had a little problem with flames on the grill from the fat but all and all everyone loved it. Nothing left at the end of the day.

Kevin's Teriyaki Chicken

The chicken was tender and my family liked it okay but all I could taste was soy sauce. This makes a tremendous amount of marinade. Probably won't make it again.

Zesty Slow Cooker Chicken Barbecue

We really enjoyed this. I have made twice, once over baked potatoes and once as sandwiches. We use Sweet Baby Rays BBQ sauce, it's the best. The sauce does look very thin after cooking but I shred the chicken during last 30 minutes of cook time and it soaks up all the sauce. We will make this often.

Chiles Rellenos Pie

This is one of my husbands favorite recipes. He loves having it for dinner and then having the leftovers for breakfast. Have successfully used fat-free evaporated milk, and light sour cream as well as reduced fat cheese. Don't suggest fat free cheese, it won't melt. Roasting fresh chiles makes a big difference in flavor but canned will do if you are in a hurry. Once they come out of the oven I throw them in a ziploc bag to cool...it kinda steams them and helps the skin come off easy. Remember to never wash them after roasting or you wash off all the flavor!
