Avocado, Tomato and Mango Salsa

Very, very good. Just make sure your mangoes are ripe! We bought ours the day we made this, and they were not quite ripe, so I had to add sugar to the salsa in order to bring out the sweetness.

Perfect Turkey

Best turkey EVER. The whole cooking method made the moistest white meat we'd ever had. And the drippings were what made it incredible. What we didn't use to make the gravy, we saved and added it to the After-Thanksgiving Turkey Soup from this site... SOOOOO AMAZING!

Double Layer Pumpkin Cheesecake

A very good change-up from the regular pumpkin pie on Thanksgiving. Made my own graham cracker crust, which I think improved it a lot.

After-Thanksgiving Turkey Soup

To me, a good turkey soup starts with a good turkey. We made the Perfect Turkey from this site, and the drippings were so incredible. What we didn't use for the gravy on Thanksgiving, we saved and added it to the stock that this recipe made. We had some dark meat leftover also that we chopped up and added, since the carcass was pretty much picked clean when we started. SUCH a good soup -- hearty with lots of flavor! I've never had such a good turkey soup. We will be making this every year!

Balsamic Chicken and Fresh Mozzarella

This was EXCELLENT. Made a few modifications: didn't have any balsamic vinaigrette on hand so I made Mama's Balsamic Vinaigrette (on this website), which I highly recommend! Marinated chicken filets for 24 hours (poked holes in the chicken so they would absorb marinade even better). I put the whole thing - marinade and all (added a dash of Italian seasoning) - in a baking dish and put it in the oven for 30 min at 350. During the last ten minutes of cooking, I put tomato slices around the chicken in the pan so they would warm up and absorb some of the awesome flavor. During the last 5 minutes, I put mozzarella slices on the chicken so they would melt, along with dried basil sprinkled on top. I served it by pouring some of the leftover balsamic vinaigrette around the chicken and placed the tomatoes on top. It came out PERFECT. I will definitely make this over and over again - it was so easy, yet elegant, and it was incredibly tasty!

Tempura Dipping Sauce

Asparagus Quiche

My very first attempt at making quiche, and it turned out fabulous! I didn't have a steamer, so I ended up sauteing the asparagus in some of the bacon grease, which added to the overall flavor. I didn't have Swiss, so I just used a pre-shredded four cheese blend. Even my husband had three pieces himself, and he HATES (and I really emphasize the caps) vegetables. He had told me that he would try it but probably wouldn't eat very much, but he ended up eating half of it himself! Great recipe.

Bacon Wrapped Smokies

I was so excited to make this because of all the raving reviews. My husband and I had guests over last night, and I decided to send my husband to the grocery store to get the smokies. He ended up getting pork instead of beef, but they turned out EXCELLENT! Everyone loved them and told me so, and they were gone in about 15 minutes. One suggestion -- make sure you line the pan with foil, and I mean the ENTIRE pan. I missed a couple spots, and bacon grease is now caked onto the pan. Other than that, AWESOME recipe. This will definitely be a family favorite.
