Beef Stew V

this was a very good basic stew recipe that is easy to tweak based on personal preferences. the red wine really gives it a nice rich flavor! i omitted the water and beef bouillon and used about 4 cups all natural beef broth and 1 1/2 cups red wine for my liquid. also added a bay leaf and a few tablespoons of worcestershire. used sweet potatoes instead of white since my hubby and i try to avoid white potatoes. will definitely make again!

Hot Fudge Ice Cream Bar Dessert

everyone freaked out over this at the party i made it for! it did take more ice cream sandwiches to fill the pan (probably about 24) and also took the advice of others and layered the fudge/pb before the whipped cream so my layers were: ice cream sandwich-pb/hot fudge-whipped cream-peanuts. i repeated this and then topped it with chopped up reeses peanut butter cups and caramel sauce. froze it overnight (which i would recommend)! wow--tasted just like a snickers bar!

Too Much Chocolate Cake

WOW!!!! Amazing cake! This recipe is quick, easy and delicious! I did make a few minor modifications: only used 1/2 c oil, used coffee instead of water, used chocolate fudge cake mix and used mini chocolate chips. Baked for 52 minutes and the cake came out moist and delicious! Topped it with "Satiny Chocolate Glaze" and it looked like a professionally-made cake!

Best Chocolate Chip Cookies

Perfection! Followed the recipe exactly other than leaving out the nuts b/c we didn't have any on hand. I made mine pretty big so they took closer to 13 minutes to bake. Will add this to my recipe collection for sure!

Easy Caramelized Onion Pork Chops

Simple and delicious recipe! Following the advice of others I browned the chops in the oil, removed them from the pan and added the onion and 2 tsp sugar. Once the onions had carmelized beautifully I put the chops back in the pan with the onions, poured in one cup chicken stock and covered/simmered for 30 min ( I used thick chops so they took a little extra time). I then removed the cover and let the sauce simmer/reduce for an additional 10 minutes. I served them with acorn squash and roasted brussel sprouts. A wonderfully satisfying meal!

Sweet and Sour Meatballs II

delicious recipe with a couple of simple modifications! for the meatballs i only used 1/2 of a chopped onion and seasoned my bread crumbs with parsley, garlic powder, and italian seasoning. for the sauce i used white vinegar rather than cider and cut way back on the amount, using only 2 T. i also used only 1 T cornstarch and only 3/4 cup brown sugar. any more sugar would have been much too sweet (even for me-and i LOVE sweets!) i baked the meatballs for 30 min at 350 and then put them in a crockpot with the prepared sauce as well as sauteed carrots, green peppers and onions. i let it all simmer on low in the crockpot, stirring gently and frequently, for about 2 hours and served it all over brown rice. it was wonderful!! i will definitely be making this one again and again!

Best Big, Fat, Chewy Chocolate Chip Cookie

of course these are super sweet--they are chocolate chip cookies!! loved the ratio of brown sugar to white but i am a huge brown sugar fan. i baked these for 15 min and the cookies were perfectly done. the biggest challenge in this recipe is not eating all the batter! it is so good! will definitely be making these again.

Unbelievable Popovers

wonderful popover recipe! a few minor modifications: melted a dime-sized amount of butter in each popover cup in 450 degree oven for 2 min prior to pouring batter into cups (watch close and don't let it burn!). also baked for 15 min at 450 degrees then 375 for 15 minutes per another review's suggestion. also important: do NOT open the oven while baking! turn on the oven light if you must but do NOT open the oven door!!these turned out crispy on the outside and light and fluffy on the inside! can't wait to make them again!

Greek Chicken Pasta

delicious and healthy recipe! i made the following simple additions/modifications for added flavor: doubled the artichokes, drained the artichokes from the oil and marinated the chicken in the oil for one hour, used two small chopped tomatoes and one can diced tomato undrained, used 6 oz fat free feta, added one sliced red bell pepper and 2 cups fresh broccoli, used extra salt and oregano, added dried basil. delicious!! husband thought it was outstanding and gobbled it up. little did he know i used fat free feta. heehee ;)

Almost No Fat Banana Bread

delicious!! i was skeptical of a low fat banana bread but this was great! following the suggestions made by others, i modified the recipe in the following ways: 3/4 c whole wheat flour and 3/4 c all-purpose flour, no white sugar and 1/2 c brown sugar, 1 whole egg rather than 2 whites, 3 very ripe (black) bananas, 1/2 c applesauce, 1/2 t almond extract, 1/2 t vanilla extract, 1/2 t salt and also added 1/4 c choc chips. baked at 350 for 45 minutes and bread came out incredibly moist and delicious. will be making this one again and again!

Bacon Wrapped Smokies

i get requests all the time to bring this to parties and it is always the first dish to disappear! i double the brown sugar and line the cookie sheet with tin foil for instant clean up. it does need to cook a bit longer than suggested to crisp up and caramelize the bacon and sugar. who knew pork covered in brown sugar could be this good?!

Spaghetti Sauce III

good basic recipe. i made a few changes to suit our tastes--used fresh minced garlic, three cans of tomatoes rather than two, chopped fresh zucchini squash rather than mushrooms and topped the sauce with trader joes meatless meatballs. yummy!

Baked Chicken Nuggets

so yummy! me and my husband liked these nuggets as much as my 3 year old! they were crispy on the outside and juicy on the inside. a few modifications: used plain bread crumbs and added 1 T. italian seasoning and 1 t garlic powder, used one egg beaten rather than butter, and placed the nuggets on a cooling rack in the oven as others suggested. we put the nuggests on top salad greens with carrots, cucumber, green pep, diced tomato and low fat shredded cheddar cheese. then topped it with fat free ranch and enjoyed a healthy and DELICIOUS salad!! yummy!

Quick and Easy Tuna Casserole

delicious! we modified it a little to made it healthier: used one can campbells "healthy request" cream of chicken and one can "healthy request" cream of celery. also sauted the onion in olive oil to soften it up before adding it at the end. we used low-fat cheddar rather than processed cheese and added 1 tsp. garlic powder and lots of salt and pepper for flavor. topped it with more low fat cheese and bread crumbs and baked at 350 for 15 minutes. my family gobbled it up. will make again!

Easy Tilapia with Wine and Tomatoes

healthy and delicious with a few easy modifications--doubled the garlic and tomato, drizzled each fish with a small amount of olive oil and omitted the butter, added lots of salt and pepper and a splash of fresh lemon juice, sprinkled fish with dried basil rather than basil leaves (didn't have any on hand). baked in the oven at 425 for 20 minutes in 9x13 covered tightly with foil but can't wait to try it on the grill this summer. i served it up with brown rice and green beans for a nutritious and delicious dinner. i will keep this one in my regular rotation for sure!

Andrea's Pasta Fagioli

delicious! i did make a few modifications: used chicken stock instead of water, doubled the garlic, used half the amount of pasta, added one chopped zucchini and a can of green beans. i also let the soup simmer for over 2 hours which really concentrated the flavors and caused it to thicken up nicely. my husband loved it too and we can't wait to eat leftovers tomorrow!!

Cheesy Potato and Corn Chowder

delicious! here's how to lighten the recipe up a bit if you are trying to eat healthy: extra virgin olive oil rather than margarine, skim milk, chicken gravy mix rather than the country style gravy mix and 2% velveeta in place of the real thing. the soup still tasted rich and delicious! other modifications i made include adding one can of cream style corn and a dash of cayenne pepper and tobasco sauce. a very satisfying soup that i will be making again and again!!
