Neat Sloppy Joes

Very good flavor. I took the advice of others and cut back on the sugar. Since we eat as healthy as possible whenever possible I didn't change the actual recipe, just used healthier versions of the ingredients - I used ground chicken breast not beef, in place of canned soup I used V8 tomato soup, used reduced sugar Heinz, used 1/2 the amount of brown sugar and I don't like celery so I put yellow peppers in, also used real garlic! Very good!

Burrito Pie

This is a very easy, tasty recipe and with these few adjustments can be healthy as well. First I did cut it in 1/2. I used 1 lb of ground chicken breast, used fat free beans, low fat cheese, whole grain low fat tortillas and in place of taco sauce addes a bit of salsa. It was delicious. With all the other flavors you don't miss the extra fat or calories.

Best Brownies

There are not words to describe these decadent little pieces of ooey gooey fudgy heaven! Yes they are so simple and basic but some times simple is better! My icing was a bit too thick so I thinned it out with some Kahlua!

Chicken Asparagus Roll-Ups

This really is delicious!! Simple, yet so tasty! I did as others and put some of the sauce in the breast before placing the cheese and I did add some of Paula Deens house seasoning to the panko. YUM

Creamy Smoked Salmon Pasta

I thought this was a very tasty dish - light but filling. I used whole wheat penne to make it even healthier and used Smart Balance in place of butter. Did have to add a bit more skim milk (I use the skim milk plus - tastes like 2% but no fat) at the end. Very tasty, I do agree with other reviews this is nothing like a carbonara though.

Kalua Pig in a Slow Cooker

I was concerned with the fact there was no liquid. But it was fine. The entire family LOVED this. They didn't use bbq sauce or anything, just put it on the Hawaiian rolls as others suggested. I only had to cook it for 12 hrs and after about 10 I pulled it out, shredded it and put it back in the juices on low.

Sweet and Spicy Green Beans

DELISH!!! This dish is wonderful. We really enjoyed it! I couldn't find any garlic chili sauce so I used plain chili sauce and added extra garlic. As soon as we finished dinner my fiancee asked me to make this again! I will try this sauce with other veggies. Great recipe!

Slow Cooker Chicken Stroganoff

This is a quick - comfort food type dish. I used healthy request cream of chicken and fat free cream cheese and served over brown rice and it turned out great! I did as others suggested and added an extra can of cream soup (healthy req. cr. of mushroom). My fiancee who is a true southerner - fried food, meat and potatoe man really enjoyed it. This is definitely a dish that can be adjusted to be healthier and still delish! I served the Sweet and Spicy Green Beans with this - nice compliment to the creaminess. Thanks for this recipe!

Marinated Scallops Wrapped in Bacon

YUMMY!!! I have made bacon wrapped scallops several times but never marinated them - I will not make them any more w/out marinating the scallops - WOW! Unlike others, I did marinate mine for a bit over an hour and they were wonderful, tender, moist and the time stated cooks them perfectly. One change - I will cook the bacon a bit longer just to get a little more done, this is my personal prefrence. My fiancee couldn't stop eating them, he said they were definitely the best he had had.

Champagne Shrimp and Pasta

Great flavor for such a simple recipe. It really is an easy elegant dish. I made this for Valentines day and it was definatley a hit. I used part fat free half and half and it was still rich and creamy.

Cajun Chicken Lasagna

WOW - this was wonderful. To make it a bit healthier I used whole wheat noodles and butoni light alfredo sauce, I also poached the chicken in spiced water (bay leaf, sage, greek seasoning and pepper) then shredded it and it was fabulous! This is a definate keeper. The spicey andouile with the creamy alfredo is a delicous combo.

Sausage Polenta Bake

A unique way to have serve sausage. I did as others suggested, baked the polenta, sauteed the sausage w/sauce and waited until time to serve then placed a slice of polenta on plate and topped w/sausage and sauce mixture.

Savory Pork Stew

This stew was a hit! Never heard of, or tried a pork based stew but sure glad I did. I did as others suggested and added carrotts and garlic also, in place of potatoes I used rutabegas (they go great with pork and are healthier) and added some green beans, also used both cream of mushroom soup and golden. I also had to thicken the broth a bit as mine was runny. And, as others stated it has to cook for much longer then stated (I cooked mine all day in the slow cooker). VERY GOOD!

Kicky Steak Strips with Rice

Great flavor - though I did do as others stated and added soy sauce - I doubled the sauce. Also - I used part regular mustard and part chinese hot mustard, this added the Kick! Served it with broccoli as others suggested.

Tater Tot Casserole III

Everyone loves this dish when I make it. I too cut way back on the butter, I only put about 2 T. of butter in the mixture and didn't put any on top. Also I used a mixture of the butter garlic crackers and fried onions for the topping. I also used the healthy request cream of mushroom soup and used light sour cream and no one knew it was a lighter version.

American Girl's Peach Cobbler

This was REALLY good! It was pretty cold last weekend and we wanted something sweet and warm but somewhat healthy. I made this as written just swaping whole wheat flour for regular, and baking Splenda for sugar. I also sprinkled a bit of Splenda brown sugar on top to brown it. And, as others suggested added some vanilla, cinnamon and nutmeg to the batter. We ate it warm with a little light ice cream. My fiancee, who is anti-good for you food (fried chicken rice and gravy would be his meal everyday if possible) had two helpings of this he liked it so much!! Thanks for a quick fix for our sweet tooth with out killing our diet!

Shrimp and Andouille Sausage with Mustard Sauce

WOW! I was like others when I saw the mustard and cream I wasn't sure about this recipe. Then I read other reviews and decided to give it a shot. You will be shocked. It really does have a unique flavor. Everything blends so well together. I used regular cream and it was fine, I think I will even use half and half next time and I added some cajun seasoning to sauce as well as bit of a rue to thicken it slightly. One other recomendation would be to use a slightly thicker pasta, I think the angel hair gets lost. If you like shrimp and andouille give this a try I doubt you will be disappointed.

Beefy Baked Ravioli

WOW. Everyone LOVED this dish. My boyfriends daughters (who are VERY picky)raved about it. I thought it tasted like lasagna. I didn't think it was bad, I guess I was just expecting a different taste. I will be making it again as I keep getting request for it. It is much easier then lasagna!

Awesome Ham Pasta Salad

This salad had a wonderful flavor! Everyone loved it. I didn't add the ham as none of us are ham eaters, but I did add cucumber. Even my boyfriends daughters (who are VERY picky eaters) raved about it. This is a keeper for summer get togethers. Next time I might try some chicken or tuna in it and make a meal of it. Thanks for the great recipe.
