Anniversary Chicken I

Slow Cooker Carolina BBQ

This was awesome with the exception that it was too hot. Next time I will leave out the cayenne. It made the house stink like vinegar but it was definitely worth it. I was born and raised in NC and it is fairly close to what I grew up eating. Yum!

The Best Meatballs

I never thought that it would be possible to make good meatballs without pan-frying before baking. I was wrong. These meatballs are simple and delicious!

Pumpkin Pancakes

These out so good that my sons were begging for more. Great flavor and texture. I do recommend aging the batter for at least 10-20 min. before cooking. Do not stir the batter again after the initial mix because that will make the pancakes tough.

Pumpkin Roll I

This turned out to be a yummy cake. It didn't taste like pumpkin at all though. We thought that it was just like a good carrot cake. The recipe was fairly easy and the results were impressive.

Potato Latkes I

I made these tonight and they were gobbled up quickly. I served them with sour cream and applesauce. They tasted great with both. I added more onion, a little less salt and used light olive oil to fry them.

Dill Pickle Meatloaf

Hubby loved this. I used bread crumbs instead of the bread slice. I baked it in muffin tins rather than making one big loaf. It needs a bit more sauce though so I will double it next time.

Award Winning Soft Chocolate Chip Cookies

These are too soft if you like warm cookies but they are fabulous after they set up and cool down. The texture is soft and they turned out perfectly. This recipe is perfect for taking to events. They are much better cold. You can crowd them on the cookie sheet. They do not spread.

Brown Sugar Meatloaf

Holy cow, this was good! The only thing I did differently was I used a combination of ground turkey and pork for the meat. I flipped the meatloaf over onto a plate to serve. It had the perfect crusty texture on one side and the yummy topping on the other. We loved it!!

Fresh Strawberry Upside Down Cake

Yum!! I baked this in a bundt pan and it turned out beautifully. I served it with whipped cream. It wasn't as sweet as I thought it would be so the whipped cream was a perfect accompaniment. Definitely a keeper!

Brandy's Cheese and Bacon Frittata

This is a good base recipe for making frittatas. I throw in whatever I have on hand if I don't have the original ingredients (ham, sausage, bacon, peppers, leeks, broccoli, tomatoes, onions, different cheeses, etc.). I make it different almost every time and it always turns out great.

Famous Pork Chops

I agree with previous posters. Only use 1/2 the butter and 2 eggs is plenty for the coating. I added Lawry's salt and garlic powder to the cracker crumbs. I cooked uncovered and broiled at the end to give the chops color. These were so good! Both of my kiddos raved and they don't usually care for meat. I normally don't care for pork chops but I loved these!

This dish was fabulous! The only thing that could improve it would be brushing it with butter or oil before cooking and throwing on some Lawry's salt and pepper.

Easy Beer Bread Mix

Holy cow, this bread is wonderful!! The crust is amazingly crunchy and buttery. I didn't have self-rising flour so I subbed it with AP flour mixed with 1/8 t. salt and 1 1/4 t. baking powder per cup.
