Chicken Cordon Bleu I

Absolutely delicious! Added the sauce (1 can reduced fat cream of chicken, 1/2 cup reduced fat sour cream & 1T lemon juice) prior to baking, served with garlic mashed potatoes & broiled asparagus....YUM! Looks like a meal that took hours to prepare, but literally only takes minutes! Just waiting for it to come out of the oven is agony!

Peter's Baked Stuffed Onions

I thought this was just OK. I absolutely LOVE onions so figured this was right up my alley. I think there is something about boiling onions that takes away from the 'onion' flavor. Don't get me wrong, it was fine, just not as WOW as I was expecting. My boyfriend (who has learned to tolerate onions now) thought it was great!

Chicken Tequila Fettuccini

Absolutely delicious!!! Based on other reviews, I did make a few modifications. For the sauce, I upped the ingredients by about another 1/2. After I cubed the chicken, I put it in a bowl with 2T tequila, 1T lime juice and 1/4 cup chicken stock and let it marinate while I cut up the vegetables. I also used more jalapenos & garlic. I made this for a friend last night and she couldn't quit raving about it! It is so good that at 8 a.m. I'm counting the minutes until lunch so I can have the leftovers!!

Tomato Spinach and Basil Soup

Delicious. However, as other users noted, it was missing a little 'kick.' I added some Frank's Hot Sauce and that did the trick! Took this soup from a 4 star to a 5!!!

Deluxe Garlic Ribs

By far THE best rib recipe yet. I have used this for baby back as well as apare ribs. The only difference is I wrap the ribs in foil before placing them on the grill (less mess!). The sauce is to die for!!!

Juicy Roasted Chicken

This was an incredibly moist chicken!! I did add butter under the skin as other reviewers suggested. Also, I used a variety of spices (garlic salt, onion powder, garlic powder, seasoned salt, coarse sea & himalayan salt, garlic & herb rub and ground pepper). WONDERFUL flavor! (Note: the recipe is for a 3 pound chicken, mine was nearly 7 pounds and took a little over 2 hours.) One other thing, in a covered baker I cut up celery, carrots, red potatoes and yellow onions, topped with the same seasonings I used on the chicken, as well as added some fresh garlic. Wonderful accompanyment!! Thanks for a great recipe that will definitely be a staple in my monthly recipes!

Mexican Fire Rice

Pretty good recipe. I did what a few others suggested by adding a diced onion and a can of Rotel tomatoes with diced green chiles (hot). I also used chicken broth for the rice rather than water. Isn't one of my favorites, but will make again.

Zucchini Boats on the Grill

These were wonderful! Tasted much better than they looked. I did place this under the broiler for a few minutes after I took them off the grill to crisp them up a bit, which they really needed! Also, I made the aluminum 'boats' as well rather than wrapping them completely. Thanks for a different recipe!

Strawberry Romaine Salad I

Absolutely wonderful!!!! I did as other reviewers suggested and cut the amount of poppy seeds in half and I added some sliced almonds. I made it on Thursday night for a dinner party I was attending and it got rave reviews. The following night I was hosting a dinner party and made it again (because I was craving it!). Once again, everyone couldn't stop talking about how good it was and all wanted the recipe. Thank you so much for this recipe!!!

Fettuccine with Sweet Pepper-Cayenne Sauce

DELICIOUS!!!! As other reviewers suggested, I added an onion and chicken breast to the pepper mixture sautee. I also cut back on the chicken broth a bit. If you love spicey, DON'T cut back on the cayenne pepper--it makes the dish! As for the leftovers not being as good, I can't speak to that, we ate it ALL!!! Thanks for a great recipe!!

I marinated it closer to an hour and added a garlic & onion seasoning blend to the marinade. This was delicious!!! The chicken was rather moist too! Will definitely be making this again!

Linguine with Peppers and Sausage

Followed advice of others and added more spices, used hot italian sausage and 1 green & 1 red pepper. Felt that this wasn't quite "saucy" enough, so heated up some jarred spaghetti sauce (tomato and basil) and poured some over the top. It made QUITE a difference. It would have gotten a 4 star rating if it included red sauce. Will make this again, but will make my own red sauce to add to the mix next time.

Champagne Punch I

I personally didn't care for this (way too sweet for my taste) but I made this for a group of folks at Christmas and they all RAVED about it. Two of the girls went home with the recipe and made it for parties they were having over the holidays. They are STILL talking about how good it is.

Indiana Potato Salad

If I could give TEN stars to this I would. I did add about 1/2 cup of sour cream before baking. Everyone raved about these. My friend and her husband insisted on getting the recipe. Will definitely be making these again (and again and again)!!!

My Kid's Favorite Pork Chops

These chops were so moist they were falling apart! I did sprinkle the steak sauce on and marinate them in the beer with a small amount of BBQ sauce (Sweet Baby Ray's, of course!) for 2 hours before cooking. I also a touch of garlic powder to the chops when browning them. This is definitely a keeper!! P.S. Made this with the "Indiana Potato Salad" recipe from this site and it was wonderful together!!! (It is a hot sidedish, not cold as you might think from the title.)

Quick Chicken with Asparagus and Provolone

Very good. The chicken turned out incredibly moist. Followed other reviewers advice and waited to put the cheese on at the end and used fresh asparagus, however, no need to steam it beforehand, it was plenty tender following the recipe. Did use chicken broth and white wine mixed for liquid and don't recommend cutting down on it. I served this with white rice and drizzled left-over juice on the rice. (Oh, also used a little extra cheese and some of it melted into the juice, which was really good!)

Cube Steak Parmesan

Delicious!! Like other reviewers, I used jarred spaghetti sauce (and still included the spices). I actually doubled the sauce as I served it with a side of angel hair pasta. Quite yummy!!
