Apple Crisp II

This could've been better if I had followed directions. I didn't peel my apples, trying to keep a little fiber in the dish but the peels didn't soften. I also used slow cooking oats because that's what I had and it didn't meld as well with the rest of the "crisp".

Firecracker Grilled Alaska Salmon

This was a fantastic recipe! I didn't have ginger on hand and used red pepper but not flakes, so unfortunately I ended up tasting no hot spice. However, that was fine because I loved the sweetness. I cut the recipe in half since it was only for me and marinated one filet for 4 hours and the other overnight. The 24 hours really made the taste even better. This is definitely a keeper and I can't wait to make for guests!

Kabob Marinade

After reading other reviews, I cut the oil to 1/2 cup and the soy sauce to 1/2 cup. Next time I would cut the soy sauce a bit more as well. I marinated 4 boneless chicken breasts overnight in a giant ziploc and then grilled. I thought this came out wonderful. The chicken was SO moist!! I will most definitely use this again.

Boiled Chicken

Yep, this was perfect! I boiled split chicken breast which promptly allowed the meat to fall off the bone. I then used the chicken in my own curried chicken salad.

Buffalo Chicken Strips II

I cut up a chicken breast and poured a lot of hot sauce on it before sauteing. Once it was mostly cooked, I added a little bit of butter and more hot sauce. I used bottled blue cheese dressing just 'cuz it was quicker. Will definitely make again when I'm looking for something quick.

Mushroom Pork Chops

This is very good. I've been on the South Beach Diet for a few weeks and have been looking for a pork chop recipe that doesn't require a coating. I rubbed the pork with pepper, garlic powder and sage before browning. I cooked this the first time with 2 cups of chicken broth (which was a little too much). This time I used a can of cream of mushroom soup and added a little chicken broth to thin it out a bit. I also added a whole onion but no mushrooms because I didn't have any. I served with steamed asparagus.

Blackened Chicken

WOW, I can't believe my smoke detecter didn't go off!! This was very tasty, which surprised me since it was so easy! I ran out of paprika, so didn't use but added garlic and chili powder. I pounded the chicken breast a little thinner and had it in the oven for about 12 minutes. Served with sweet potato.

Swedish Nuts II

These were great! As another reviewer commented, they don't look too pretty but taste yummy. I used walnuts instead of pecans because I mistakenly bought them instead. Would use walnuts again 'cuz they're cheaper.

Chicken Curry I

I was very happy with this recipe. I used 3 boneless chx breast cut-up. I didn't measure the spices exactly but put about 2 tbl of curry. I also added a jalapeno pepper and omitted the lemon 'cuz I didn't have any. I used about 1 1/2 cups water with a chicken bouillon cube. I served over brown rice and sweet potatoes. This is a keeper!

Chicken Quesadillas

These were great! I mixed the cheeses instead of putting any on top. I'll probably use more onion next time and maybe some jalapeno. I also dipped had sour cream on the side.

Sean's Falafel and Cucumber Sauce

I thought this was really good. I didn't add the coriander because I didn't have any. I don't usually measure spices but I know I put more than a pinch of cayenne and unfortunately didn't even notice it. I pulsed the chickpeas in the food processor a few times and the consistency was perfect. I also tried cooking them both ways, frying and baking and the baking dried them out, so I wouldn't do it that way again. I will definitely make this recipe again and fry them.

Spinach and Artichoke Dip

I didn't particularly like this and I couldn't figure out why. However, everyone else raved about it. It took longer than 15 mins to cook but I then kept it hot in my fondue pot, which worked well.

Mouth-Watering Stuffed Mushrooms

I made these for Christmas and again for a party two days later. Everyone LOVED them and they were easy. I had about 3 dozen mushrooms and still had some stuffing left over. I followed anothers advice and sprinkled with Italian bread crumbs. Easy to bring to someone else's house.

Fantastic Crab Dip

This was a big hit! I wasn't initially thrilled with the result but once it chilled overnight, it really made a difference. I used 1/2 yellow onion instead of green onions and added a couple shakes of hot sauce as someone else recommended. I tried a little after heating in microwave and didn't like it, so I served it cold in a sourdough bread bowl. I will definitely make again, as it was very easy.

I made this in my bread machine, so I cut the ingrediants in half. I thought it was very salty (and I love salt), so I would caught the amount even further next time. I would try this again if I make bread sticks.

Cheese Filled Triangles

These tasted great but definitely were time consuming. I made them for a baby shower and wish I had brought more, as they were gone immediatley. I ended up spraying the triangles with butter flavored Pam, as it was much faster and didn't change the outcome at all.
