Barley Turkey Soup

YUM!!! I used homemade stock from our Thanksgiving turkey, which had lots of flavor. I followed this receipe but left out the allspice and bay leave since I didn't have it. I added fresh thyme instead of dried. Very good!

Crab Stuffed Flounder

YUM!! I used Cod that we had caught this summer and had in the freezer. I followed the first part of the recipe but used club crackers instead of saltines and spicy mustard in place of the dry, since that is what I had in the house. I didn't add the egg or mayo at the end and was very happy with how this came out.

Sole In Butter Sauce

I used the sauce part of this recipe and it was perfect. We had some cod left in the freezer that we caught this summer and I used 4 filets. I didn't dip them in egg or breadcrumbs but poured the sauce over them in a baking pan. I reduced the butter to a little less than half and poured a small amount of olive oil in. Everything else I kept the same. I baked at 350 for 25 minutes and poured some of the sauce over brown rice. YUM!

Grilled Jalapeno Poppers

I'm rating this a 5 b/c of the taste but I definitely had issues with it. I some by cutting in 1/2 and others as the recipes states but either way, the bacon was an issue. I cut the slices in half, which makes sense b/c a full slice would be too much. But it didn't cover the entire surface of the cheese area and sometimes the cheese dripped into the fire. I also didn't use toothpicks, which I will have to try next time. As my boyfriend was grilling them at our tailgating party, I was taking the bacon off of them since it was causing problems. He just fried the bacon next to the peppers and people grabbed a slice with a popper. I have some leftover cheese mixture which I'm going to use to make some more but put them in the oven. The taste was fantastic and everyone still loved them, regardless of the mess!

Butternut Squash Fries

These taste better to me than sweet potato fries. I bought a 1/2 squash already peeled and seeded, which makes this much quicker. Once cut up, I spread them on a baking sheet and added garlic powder, cumin and crushed red pepper. I baked at 425 for 40 minutes, flipping once. I overcooked them or possibly cut too thin. These are going to be my new go to when I want french fries!

Butternut and Acorn Squash Soup

Loved this soup!! I used less brown sugar, as others recommended and added quite a bit of cayenne pepper. I also realized I did something different, not meaning to. I had a red pepper that I bought for another recipe and in the directions for this recipe, when it said pepper, I was thinking the red pepper. So, I just threw the red pepper in the blender with everything else. I actually had commented to my boyfriend on the red pepper taste and it wasn't until writing this review that I realized I added an ingredient that wasn't listed. Try adding it, you won't be disappointed!

Slow Cooker Beef Stew IV

I didn't saute anything, just threw it all in the crockpot. I added the meat first and mixed the flour on top. I also used two cups of beef broth instead of water. It was perfect and easy!

Chili Brie in Sourdough

This was quite yummy! Next time I would buy an extra bagueete, since I had to use crackers initially to dip in the cheese. As we continued eating, we pulled the sides of and the cheese was melted on. I also think I might use a wheel and 1/2 since I think it could've used just a bit more cheese.

Double Layer Pumpkin Cheesecake

Super easy and yummy! I used a 15 ou can of pumpkin and an extra cream cheese based on other reviews but I ended up with quite a bit of extra, so plan to make some mini cheesecakes today. I brought this to a "Friend's Thanksgiving" and everyone said it was great!

Beer Can Chicken

I made a few changes based on what I had. I rubbed dijon mustard all over the chicken first. Then I added the dry indregiants on top. I didn't have chili powder but added some red pepper flakes. My chicken was almost 4 lbs and I put it on a stand with the beer can. The reason I don't have this as a 5 star was that the beer didn't seem to add anything. It was easy to make and I cooked it on my grill on indirect heat at 350 for a little over an hour. For that reason, it's easier to me that cleaning out a grill pan. Maybe I need a different beer since mine was a Coors Light. I bet a Guinness would be good!

Baked Chicken Wings

I used cayenne pepper instead of chili powder, since that was what I had. Once these were done, I mixed melted butter and Frank's hot sauce in a bowl and dredged the wings through that and baked for about 5 minutes more, which melded the flavors. This was my first time making wings and my boyfriend and I loved them!

Pasta Primavera with Smoked Gouda

This was spectacular!!! For some reason, I thought it would be good but nothing special and I was pleasantly surprised. I don't measure things but followed the recipe almost to a T. I used diced tomatoes instead of stewed and a little less gouda since the smoked gouda has a lot of flavor, I felt I could cut some. We added some shrimp and scallops at the end. SO GOOD!!!!

French Spring Soup

I'm not sure why this soup didn't have more flavor. I substituted most of the water with chicken broth and added garlic to the onion and leeks. I didn't add any rice since the potato was starch enough. It tasted okay just not worth trying again, although plenty healthy.

Mixed Seafood Curry

I make almost the same recipe but with fewer ingredients. I use Taste of Thai red curry paste, which has become hard to find. I use about 3/4 of the packet, which I add with the coconut milk. If you like less spice, add less. I also add cut up red pepper and some times snap peas. I have never used lime or brown sugar since I want it spicy, not sweet and I serve over brown rice or whatever sounds good that day. I make this all the time and my boyfriend loves it too!

Absolutely The Best Shrimp Scampi

YUM!!! I followed most of the directions. I only used one pound of shrimp, since we actually made this for two but I kept the other ingredients the same. I didn't cook the shrimp for 5 mins, probably closer to 3, since 5 mins seemed like a lot. I added the white wine and not the brandy and didn't bother putting it under the broiler. I'm not sure what that adds. I served over whole wheat linguine (added a bit of olive oil over it first) and topped with some crushed red pepper and fresh parmesan. Not too time consuming and very tasty. We will definitely add this to our regular rotation!

Grain and Nut Whole Wheat Pancakes

This is my 2nd time making these. The batter was thicker this time, so I'm not sure what modifications I made the first time around. I'm not usually a pancake person but these were fantastic. It makes a lot!! I made a bunch and stored them in the fridge and would bring two to work for a mid-afternoon snack w/ peanut butter (didn't even heat up). These are great if you're a runner and need something quick to get your energy back. I will never make any other kind again!

Salmon with Creamy Dill Sauce

This was just ok. The dill sauce was yummy but the salmon was just salmon....not that that's a bad thing but not worth this recipes.
