Whipped Cream Cream Cheese Frosting

I used the chilled whisk beater and bowl method. I halved the recipe, which was barely enough for the cupcakes from one box of cake mix. I substituted fat free cream cheese, and 3/4 c powdered sugar, and added 1/8 tsp of cornstarch. Making sure it stayed chilled, I piped it easily with my icing gun, but I wasn't doing fine details. I liked that the frosting was light and fluffy tasting, less heavy than buttercream, but it was very delicate (doesn't stiffen as butter does). Turned out fine, just had to be careful when handling the finished product.

Crustless Spinach Quiche

Holds really well for a crustless quiche. I add some mushrooms and substitute Muenster cheese with Smoked Gouda.

Easy Chocolate Crackled Cookies

Disappointing. The cookies were very light and crisp, like a wafer. Not especially tasty. I used chocolate cake mix, and the kids didn't even finish half a batch. I'd highly recommend Cream Cheese Cookies IV over these, which is similar but with the addition of cream cheese.

Cream Cheese Cookies IV

Loved this recipe! I wanted something easy, yet seem homemade and tasty. I used devil's food cake mix which gave a strong flavorful taste. The texture was somewhere between a cupcake and a cookie, and the inside remained soft the next day. I liked that it was easy to handle with my hands and roll into a ball. I flattened them just a little to the shape I wanted. I especially liked that it retained its shape during baking, which means they don't run into each other and I can cook more at a time. To be a little fancy, I rolled a few of them in chopped walnuts. I am eager to try this on other flavors.

Honey Mustard Dressing II

Best Bread Machine Bread

Added another 1/2 tsp of salt and replaced 1/2 c of flour with wheat flour, otherwise I followed the recipe and directions and came out with an excellent loaf of bread. Will definitely make again.

Easy Slow Cooker Chicken

Rice gets really sticky, which I actually enjoyed. But the recipe itself needs more flavor. I would highly advise using some of the modifications on other posts.

Berry Bread Pudding with Brown Sugar Sauce

I've made several fruity bread puddings before. This one is a really good combination of spices and fruit. It's sweet and tasty enough without the sauce. I usually just let the bread soak about 5-10 minutes, then add the fruit, making sure none are on the surface.

Cold Asparagus with Curry Dip

Wow! How can something that tastes so great be so easy?!! This tastes just like the dip that Melting Pot Restaurant uses. It's great on steamed or grilled veggies and even chunks of grilled meat. For the most healthy, I steam the veggie and use light mayo and light sour cream--still delicious.

Fruited Curry Chicken Salad

This is almost the same recipe as the "Fruity Curry Chicken Salad" except this one uses real mayo instead of light mayo and onion instead of green onion. I prefer the light mayo because it is healthier and the green onion because it is more colorful. Otherwise THEY TASTE THE SAME! ABSOLUTELY DELICIOUS! I've substituted with one or more of the following without any detriment to the taste: leftover turkey, leftover rotisserie chicken, canned chicken, red grapes, green onions, dried cranberries, and roasted chopped walnuts.

Sweet Potato Potato Salad

Not bad. I like that it used sweet potato, which adds more nutrients, but it basically just tastes like a typical potato salad. Nothing spectacular about the taste.

Honey Carrot Cake

Very good delicious cake. I use my food processor to grate the carrots, walnuts, and pineapples very finely, so my kids don't see them. Then they love it, and I feel good that they aren't eating refined sugar.

Fruity Curry Chicken Salad

LOVE this recipe, my favorite of all recipes I have tried at this site. It is healthy, relatively simple to make, can be made ahead of time (although Hubby keeps eating it up). I often substitute depending on what I have on hand without any problems: canned chicken, leftover rotisserie chicken, leftover turkey, fuji apples, walnuts, cranberries, yellow onions. This is one of the few recipes my husband and my own mother has complimented me on more than once.

Candied Sweet Potatoes

It took too long to cook over the stove; I ended up putting the yams and sauce into a casserole dish and baking them, with minimal supervision. I occasionally basted the yams with the sauce, so they wouldn't get dried out. They turned out fine; my hubby really liked them. For that classic look, I dropped some marshmallows over the top after I turned off the oven.

Coconut Pumpkin Nut Bread

I didn't use coconut flakes, because I didn't have them and I don't really like coconut anyway. I made one loaf and about a dozen muffins. They were just okay, not that moist. I reheated one of the muffins in the microwave the next day, and it was actually better than those fresh out of the oven.

Cranberry Walnut Bread

I enjoyed the slightly sweet taste of honey, the tangy cranberries, and the chewy texture. I like that no sugar was needed. I used whole milk instead of buttermilk because it's what I had on hand.

Light and Fluffy Spinach Quiche

Who needs the fat of heavy cream as in other recipes? This is healthier and tastes great. I ran short on spinach, so I added frozen chopped broccoli. I'll definitely make this again.
