This recipe was simple and delicious! I used fresh parsley instead of dried, because I happened to have it and butter flavor cooking spray in place of butter because we have a dairy allergy in our family. I'll definitely be making it again!

Pecan Breaded Chicken Breasts

I used walnuts, because that is what I had, and next time I will grind them finer to get them to stick better. I also brined the chicken breasts for a half an hour first, which helps keep them nice and juicy.

Slow Cooker Beef Stew I

I made the changes recommended by other reviewers (increased the flour, browned the meat, added red wine) and this stew was delicious. My husband particularly liked it.

Butternut Squash Soup II

Delicious! I was pleased to find a squash soup recipe that could easily be made dairy free. (I used Earth Balance margarine in place of the butter.) Definitely worth the effort of peeling the squash!

Quinoa Pilaf

I really liked this pilaf. I'm not a vegetarian, so I used chicken broth in place of the vegetable broth and added some salt, since my broth was homemade and hadn't had salt added. I think quinoa itself is a flavor that takes getting used to, but I really enjoyed this dish.
