Scallops with Red Pepper Sauce

AsI prepaid this dish I was thinking it looked a little dry, so I added 1 Tbs. of butter to scallops still looked like not enough liquid or enough spices. Wow, was this a suprise and it was sooooooooo good. The flavors didn't over power each other and you could taste the flavor of everything. Great dish. Thank you Oh just one other thing I changed I added the garlic and the scallops, after i had cooked the red peppers for about 5 minutes

Southwest Stew

A great way to use up leftovers, you could use chicken, beef, pork whatever. I had some leftover pork roast, so I simmered the diced pork in 6 oz of beer and the water in from the recipe for 15 minutes. Then I followed the receipt except I used black beans, didn't have pintos. WOW this was just great will make it again. OH yea I added the last 6 oz of beer into the pot as it simmered.
