Banana, Chocolate, and Almond Breakfast Oatmeal

Made this once as written and it was bitter, but I could taste the potential. The second time, I used half a frozen overripe banana and a few dark chocolate morsels, plus the oatmeal and water. It was fantastic this way! Thanks for the inspiration!

Favorite Corn Bread

I picked this recipe because we were running low on butter. Made it exactly according to the recipe. It tastes wonderful, but is definitely a tad dry and crumbly.

Kickin' Spicy Turkey Beer Chili

I made this according to the recipe. My husband loved it, but I think this recipe has made me decide that I do not like chipotle peppers in my chili. I love them in other recipes, just a personal preference to be aware of before diving in!

Crustless Pumpkin Pie

Very tasty. Only four stars because I had to add more spices. I used fat free half and half since our evaporated milk had expired and it still came out delicious.

The Best Vegetarian Chili in the World

After trying numerous vegetarian chili recipes, I was about to give up and return to chili made with beef, but this recipe has made a believer out of me. It was delicious, healthy and filling. I didn't change a thing.

Asparagus, Chicken, and Pecan Pasta

I used 2% milk and this was still amazing. I can only imagine how good it would have been if I had actually used cream. Be prepared to for the massive temptation to over-indulge!

Ribollita (Reboiled Italian Cabbage Soup)

This was a lot of work, but I somehow had all of the ingredients on hand and needed to use them up. I am glad that I did, because this was outstanding. I ended up making it like you would French Onion Soup, putting it in serving size containers, adding the toasted bread and cheese right at the end and then sticking them under the broiler. Absolutely delicious! Thank you Josie!

Fruited Curry Chicken Salad

This was really good. Raisins and grapes is a bit of overkill, as is 3/4 of a cup of mayo, hence the four stars instead of five. Otherwise, this recipe is outstanding and we will be using it for chicken salad in the future! Thanks!

Bacon Roasted Chicken

This was an amazing recipe. The bacon not only kept the chicken quite moist, but also gave the chicken a bit of flavor. I didn't stuff my chicken with anything, nor did I use the paprika or beef broth - which is why this is getting four stars instead of five, because those are not items that would go over well. I used garlic on the chicken and used cooking wine and water in the pan. Delicious!

Downeast Maine Pumpkin Bread

We used two cups of fresh pumpkin instead of a can and added walnuts and raisins. We made one loaf and twelve muffins out of this batch. All of it is amazingly tasty!

Cincinnati-Style Chili

I love Cincinnati Style Chili, but this was my first time trying to make it myself. I was skeptical about the cocoa powder and after making it, I know that I should have trusted myself and left it out. If it weren't for the cocoa powder, this would have been great.... It gave it a bitterness that could not be overcome. No matter how long I left it to simmer, it didn't blend with the other flavors. So, next time, I'll just leave that out and I am sure it will be great!

Asian Lettuce Wraps

I was not sure about the tofu in this, so I omitted it. In order to take the recipe to the next level, I added celery and cucumber for some crunch, and cilantro for some extra flavor. It was absolutely fabulous. I was told that I have reached a new pinnacle in my cooking with this one! Always a good thing!

Roasted Butternut Squash Soup with Apples and Bacon

We have been searching for a long time to find a hearty butternut squash soup - most of the ones that we have tried are somewhat unfulfilling to us - but this one covers all the bases. I halved the amount of bacon called for to cut down on the fat, used no olive oil and tripled the amount of curry powder (sweet curry powder, not hot), but otherwise left the recipe alone. I wanted to immersion blend the whole pot, but the hubby wanted to leave it chunky, so we compromised and only partially blended it, leaving some chunks. It is pretty tasty this way and I think it would probably have the widest appeal this way. Great dish for fall!

Cheesy Turnips and Carrots

This was fairly thick, but quite tasty! A great way to use up those root vegetables! We didn't have any celery and it was good without it. For the leftovers, I am going to mix in a diced, grilled chicken breast and make some rice and we'll have a main dish! Thanks for a great way to tame turnips - the typically overpowering vegetable!

Roasted Tomato Salsa I

As recommended, I roasted all of the ingredients beforehand. I left everything else the same and it turned out absolutely wonderful! This was a great way to mix up your regular salsa routine!
