Vanilla - Chocolate Powdered Sugar Frosting

Way to sweet and not thick enough for my liking. Also a funny colour - like a white-beigeish. Won't use again.

Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

Used 2 small fresh sweet potatoes, one regular tomtato, and a whole red pepper. I used 4 cups of broth instead of the 1 cup of water and 1 cup of broth - with the increased amounts of other ingredients it was needed. I didn't put in the oregano, basil, oregano, garlic powder, onion powder, and mustard powder. I kept the same amount of cinnamon, but then I love the taste so I didn't find it strong. I also increased the amount of cayenne to 1/4 teaspoon - I generally like my food spicier than recipes give. I cooked 3 breasts of chicken in the soup when it was simmering and then cut them into strips when cooked. I liked that this made it heartier and absorbed some of the extra liquid I used. With the modifications made, I really like this soup - the family agrees, although my mum found it too spicy for her liking - but this was because of my modification.

Fresh Pineapple Upside Down Cake

Made for Father's Day. Very moist, a hit with everyone. Used canned pineapple instead of fresh, didn't take away from taste. As others have said, put cookie sheet underneath to catch drippings.

Mike's Homemade Pizza

I made just the sauce yesterday night - put in on pita with chopped tomatoes, mushrooms, feta cheese and mozarella. It was GREAT. It was just spicy enough, and adding more pepper flakes would increase the spiciness is needed. I loved it, will defintely make it again.

Warm Goat Cheese Sandwiches

I should have listened to one reviewer who said they added tomatoes and lettuce. I don't know if I mismeasured, but I found it almost too much saltiness. I'll probably give it another try at some point, but it's not a favorite as of yet.

Strawberry and Feta Salad

I loved the dressing for this salad, but I changed up some of the ingredients a bit. I used baby spinach instead of the romain lettuce, and goat cheese instead of the feta. The creamy, less salty goat cheese added a bit of a different taste. I've also been thinking about using walnuts instead of almonds.
