Raspberry Cream Cheese Coffee Cake

delicious! i made this last night to take to work for a birthday party. i made a slight change by using sugar-free strawberry preserves, sliced almonds, 1 tsp of almond extract and 1/2 tsp of vanilla. i also used less of the crumble on top. everyone thought it was so pretty and many commented that they thought it came from a bakery. i found that it was done right on time, but rose much higher than i thought it would. so make sure you don't push the batter up too high on the sides!

Supreme Strawberry Topping

very good! i cut the recipe to two, and used probably about 9 large size strawberries. a great way to use berries that are about to go bad. i cut the berries into quarters and put about 2/3 in with the sugar and vanilla. i mashed them as they cooked with a potato masher, and added the rest of the strawberries for the last minute or two. a nice and tasty addition to our angel food cake!

Alaska Salmon Bake with Pecan Crunch Coating

i had my parents over for dinner yesterday and made this. here are a few little modifications i made. i used spicy brown mustard instead of dijon, about 3 tbls of honey, and i also used panko bread crumbs instead of fresh. i cooked the pecans on the stovetop with a little bit of brown sugar, butter and cinnamon to make up for the smaller amount of honey. i baked the entire fillet (bought at costco) for 20 mins and it was wonderful! not too sweet, but just savory enough because of the mustard. i also marinated it in the mustard topping for about 1 hour before topping it with the breadcrumb mixture. enjoy!

Angel's Old Fashioned Beef Stew

this was pretty good! did a number of changes though. i used 2 TBL olive oil, 1/4 c flour, 1/2 tsp of garlic powder, salt and pepper, 1 tsp paprika. 2 lbs beef chuck, 1 sweet onion, 3 large potatoes, 3 carrots, 9 white mushrooms, 2 cans beef broth, 2 bay leaves, parsley, and a 1/2 tsp thyme, rosemary, and sage. i also added 1/4 cup of merlot and a 1/2 tsp of tomato paste. the meat was very tender, but i would probably add 1 more carrot and more mushrooms. enjoy!

tasty! changed the recipe just a tad. omitted the anise and used 1 tsp vanilla and 2 tsp almond extract instead. i also added 1/2 C of sliced almonds. pretty good! i also dipped some in chocolate and drizzled the rest.

Family Sicilian Sauce and Meatballs

i just used the sauce part of this recipe, but next time i will try the meatballs. i thought this was excellent! the addition of the neck bones gave it a really good flavor, and i thought the seasoning was quite tasty. i did happen to add some crushed red pepper which made it taste better. it was a tad bland before that addition. paired this with 'the best meatballs' and it was a good meal! i'll be making this again :)

The Best Meatballs

i thought this was pretty good! i ended up just using the meatloaf mix from the grocer because i couldn't find ground pork OR veal alone. i also just eyeballed the seasonings, but next time will add some paprika and a pinch of red pepper. i also used less breadcrumbs than called for, no water, a TBL of olive oil in the mix and then baked for about 15 mins at 350. i promptly then moved them into the sauce that i was making. very tasty, indeed!

Cream Corn Like No Other

i thought this was okay. it was good for the first few bites, but then WAY too rich. i would probably lower the amount of cream and use a 2% or skim milk instead. i also had blended part of the mixture to give it more a 'creamed' corn recipe.

Oven Roasted Red Potatoes and Asparagus

these are very tasty! make sure to not add the asparagus until the last 5-10 mins, otherwise it will definitely be overdone. i also sometimes add peppers, onions, or whatever veggies you like!

Baked Dijon Salmon

these were pretty good. i thought that perhaps it had a bit too much of a mustard flavor. i ended up baking them in foil for about 7 mins covered, then uncovered them and added the topping. i also broiled them for a minute to help crisp up the topping.

pretty good! my boyfriend said they reminded him of kfc biscuits. i brushed the tops with butter to help brown them. they were still moist a few days later!

Caramelized Baked Chicken

awesome! i halved the recipie in half because i was making it for just my boyfriend and myself. i used 4 drumsticks, added 2 tsp of brown sugar and a little bit of montreal spicy seasoning. i lightly coated them in the sauce first and used the rest of the marinade as a baste. i basted every 15-20 mins and it carmelized BEAUTIFULLY. they were so sticky and awesome, i bet they'd be even better on a grill :)

Basic Crepes

good and easy to make! i also added 1 tsp vanilla and 1 TBL of sugar. after they were ready, we ended up filling them with either strawberries and syrup, or peanut butter and bananas. very good!

Montreal Peppered Steak

my boyfriend and i enjoyed it. i used half the oil and soy sauce, and added some worcestershire sauce and garlic powder to the marinade. i also used the spicy montreal seasoning. i pricked the steaks with a fork and let it soak for a few hours. VERY flavorful.

Scallops One - Two - Three

i thought it was just okay. i pre-cooked the bacon a little so that it would crisp up in the oven, but it still wasn't that great. i felt the bacon gave it a bit too much of a salty taste. i will stick with my method of butter, parmesan cheese, and plenty of garlic when broiling scallops from now on.

Baked Potato Soup I

this soup was very easy to make. i've never made soup before from scratch, and it came out quite well. i will definitely keep working with this soup, although i'm sure that i'll be changing a few things. good basis though!
