About this Cook
Well, I am a 23 year old stay at home wife in Berea. I am so lucky to have a wonderful husband who has a good job and wants me to stay home to keep house, cook and have a garden. We have been married for just over 3 years, and we are thinking of starting a family soon! As most really great cooks tend to be, I'm a little overweight, so I love trying new, tasty, healthy foods. I just got a juicer and I'm having fun shredding up all the fruit & veggies in the house!
My favorite things to cook
I love to cook anything really... Authentic foreign dishes are really favorites. I have a recipe for Indian Curry and Naan bread that are great! Plus, I love making Sushi and pork and cabbage dumplings(Jeowtz - doesn't really translate from Chinese into English!) I had a missionary girl from Taiwan as a room mate/best friend in college, and learned so much from her! I really like to bake too - mostly breads, but cakes and pastries sometimes. Decorating is my favorite part of baking cakes, and I've made wedding cakes for 2 of my friends!
My favorite family cooking traditions
I learned to make great gravies from my mom. Canned or restaurant gravies are never as good as mine or mom's. The secret is in the whisking! I make KILLER macaroni and cheese, and sausage gravy. NOT exactly on the diet ;-)
My cooking triumphs
For valentine's day last year, I made dinner for Matt. I thought I'd give him a taste of home by preparing a traditional New Orleans menu. It turned out so well!! Spare-rib e'toufee, crab cakes, pepper biscuits - it was so good!! Served on Mom's china with candlelight... SOOOO Romantic!
My cooking tragedies
Occasionally I have no idea what to cook. So I just start throwing things together and what comes out is not always edible. If I have any really great tragedies, I'll be sure to post them :-D

Indian Style Basmati Rice
I don't have all the whole spices, so I subbed 1/4t ground cardamom, 1/4 teaspoon cinnamon, 1/8t ground cloves and 1t cumin. I also prep it all in the skillet then dump into my rice cooker - I hate watching rice on the stove!! Works great, even with brown basmati. ALSO - try subbing some of the liquid for a can of coconut milk!!

Curried Coconut Chicken
I followed this recipe's ingredients exactly except for reducing the sugar to 2T. I followed this method: Dry-fry the curry (added a few cumin seeds whole) until fragrant. Add oil and simmer. Add onions and garlic, simmer until browning. Add chicken and brown. Then add the rest of the ingredients. I had to admit I was skeptical about the thinness of the sauce, and I wasn't impressed with the flavor at first. After an hour of UNCOVERED simmering, the sauce was amazingly thick, and so rich I could hardly stand it! This will be my permanent coconut chicken recipe. I will not go looking for another one!!!

Classic Tapioca Pudding
Made this using small pearl tapioca instead of quick. Soaked 1/2 C tapioca in 2C water (as per package) for 5 hours. Then drained, and continued with recipe. No salt, and 1t vanilla. Very good! We ate it hot, but thought it wasn't sweet enough. Strangely, it seemed sweeter cold. Anyway, it's very good and I like it with nutmeg sprinkled on top!!
