Greek Orzo Salad

This is just wonderful. Make sure to use good quality marinated artichokes since a lot of flavor comes from the juice. I only used 1/2 of a red onion and it was enough for my family.

Arroz con Pollo II

This recipe is not written very clearly. Based on the recipe as written there is not nearly enough liquid for the amount of rice. It appears that the bouillion cubes need to be dissolved in water then added. The extra 2 cups of liquid would have made a huge difference, as would covering the pan. Additionally, it says to drain the peas, then add them with the liquid. The taste was good, but as written it is a disaster. Probably would benefit from a bit of cilantro as well.

Carrot Salad

Chicken Enchilada Soup II

Made this using 'hot' enchilada sauce and left out the chili powder. Gave it a nice bite. Served it with Carrot salad with pineapple and raisins. Good contrast of flavors and textures and the carrot salad immedicately put out the 'burn'.

Boston Iced Tea

Bologna Salad Sandwich Spread II

American Lasagna

Very yummy. I'd make this again in a hearbeat. Took an hour start to finish to get it in the oven. I used 1/2 lb hot Italian sausage with the burger and used no-boil noodles. I also added 1/2 cup (more or less) of dry red wine to the sauce.

Chicken and Biscuit Casserole

This is real comfort food. I used thyme instead of basil and next time I will use a little less garlic. I just dropped the biscuit dough on top and spread it slightly with a spatula. Came out great. This will be perfect for the next snowstorm.
