Lemon Yogurt Muffins

All of us loved these muffins. When I asked for a review, my son said, "Bad news mom....these are awesome!" I opted to use the plain yogurt as that's what I had on hand. I made a few alterations after reading reviews. I used 1c. whole wheat pastry flour in place of 1 c. white and they still were amazingly light. I also added a teaspoon of vanilla cause, well, I put vanilla in everything. And I did half butter, half oil. They are perfect. I agree that you don't need all of the topping. I only made half and still had some leftover. Wonderful!

Whole Wheat and Honey Pizza Dough

Kai Kang Dang (Chicken Curry with Coconut Milk)

Super good! For my own personal taste, next time I will add a bit more of the curry paste and a little less lime, but over all had a great flavor. I also did as another person suggested and used steamed broccoli instead of frozen vegi's. Super yum! This is going in my recipe box for sure!

Oh my goodness! This is perfect! Tastes better than the packets. Note to parents: You might want to leave out the red peppers if your kids don't like spice.

Fluffy Whole Wheat Biscuits

Blueberry Muffins

This is a great recipe. Very simple, but good. I liked the lemon flavor with the berries. I only had half the blue berries needed, so I substituted blackberries for the other half. And did whole wheat pastry for half of the white. I had company and he ate 5 in one sitting!

Pretty good, but I agree with the other review that said there is no way this could feed 8. At least not for my family. The three of us polished this off in one sitting, so double the recipe if you need to feed more than 4.

Crunchy Turkey Salad

This wasn't a bad recipe, but if I make it again, I will make some changes. I would do one apple instead of two and I would cube them very small. I would do more nuts and maybe a bit more turkey, too. The sauce tasted good. Actually, I improvised cause I didn't have a lemon, so I put a bit of lemonade in place of the lemon and honey. It worked.

Flatlander Chili

I really liked this recipe. The spice was perfect. Th reason I didn't give it a 5* rating is because of the tomato taste. It was a bit too strong for me. Other than that, it was great!
