Swedish Kringles

I think I must have been expecting something else when I made this. It wasn't good. The frosting is awesome! The bottom layer is completely flavorless and pointless. The middle layer needs more flavor and sweetness. It was very bland. The best part was the frosting. I think I might try this again but skip the bottom layer of crust because it really doesn't need it and it just crumbles and is dry and flavorless. I will add some sugar to the middle layer and more almond flavor. I couldn't taste any almond in the middle layer. Also, I don't know if it just my oven, but I don't usually have a problem and I bake A LOT....but I baked for 55 minutes and it looked done, I stuck in a toothpick and it came out clean, but it was NOT done in the middle. I tried to stick it back in but by the time I got it in, it had already flattened out and it was too late. Don't trust the toothpick test. I think when it looks done, keep it in another 10 minutes or something. I am going to try to find another recipe, but if I can't find one, then I'm going to try this again and alter it.

Frosty Mochas

Very good alternative to Starbucks frappuccino :) Will save a lot of money making these. I don't buy splenda but I used sugar free chocolate syrup and used regular sugar instead of the splenda. I am considering other flavorings like adding a little vanilla to it for something like a vanilla frappuccino.... will use this over and over.

Quick and Easy Alfredo Sauce

I don't actually like alfredo sauce (don't know why I wanted to make some...must be because I'm pregnant lol) but this was soooo good. I always have cream cheese around but I would have had to make a trip to the store for heavy cream so this recipe was perfect. I used it to make the "creamy chicken piccata" recipe from allrecipes. The sauce was fantastic! I will use this one again! Unless I lose my taste for alfredo when I'm not pregnant anymore HAHA

Creamy Chicken Piccata

This was good. Not WOW but better than average. I used the "quick and easy alfredo sauce" recipe from this site because I didn't have any jarred alfredo. The sauce by itself was really really good (5 stars) but once you get it on the chicken, the breaded chicken flavor kind of drowns out the alfredo flavor. Not bad though. I will make this again. Hubby likes the breaded chicken :)

Fluffy Two Step Cheesecake I

This was really good. It doesn't taste like traditional cheesecake, it's a lot fluffier. I think I prefer a heavier consistency for my cheesecakes but this is really really good. I'm going to make it for a potluck a week from now and see how it goes over at church :) My husband really loved it and said that it's going to be a hit. I think it was made better by the sauce that I made for it. I just pureed thawed frozen strawberries with a few thawed frozen blueberries (I didn't measure but it was about a cup to 1.5 cups strawberries with juices and maybe 1/4 cup frozen blueberries) with about a tablespoon or two of sugar and a tsp of vanilla. It made a thick sauce that was really good with this cheesecake. I just topped the slices with it right before serving. For the potluck I might just drizzle it over the whole cake. great recipe. I also think that you MUST use the alternate version with 2 packs of cream cheese. This barely filled my 9 inch crust and the original that only used one package wouldn't have been enough.

Banana Crumb Muffins

I've made these a few times now and they are sooo moist and delicious! I've made it as a bread and as muffins. I like to make a batch of muffins and freeze them and just nuke them in the microwave when I want a muffin for breakfast or something. I do add the cinnamon, nutmeg and vanilla to the batter as some other reviewers suggested. This is the only banana bread recipe I'll use. I've never had a negative comment.

Oatmeal Butterscotch Cookies

These are excellent cookies. I made them exactly to the recipe and didn't get flat or super crunchy cookies like some other reviews said. I baked them 10 minutes at 375. The only thing is that if you leave them on the pan to cool for more than a minute after you pull them out of the oven, they will stick really bad to the pan. This is easily remedied by taking them off the hot pan almost immediately after you pull them out. I think I let mine sit for just a minute. My first pan stuck really bad and a couple cookies got mutilated. Maybe next time I'll use parchment paper, but I was all out of it today.

Jalapeno Chicken

I'm cooking this right now and I can tell it is going to be soooo good. It smells wonderful!!! The only thing I did differently was that I cooked it on the stovetop instead of in the oven. i tossed in some sliced green pepper and onion to cook with the chicken halfway through. I took another reviewers advice and made rice with some of the extra liquid because it really didnt need that much. The only thing I changed about the ingredients is that I used 1 tsp Chili powder and 1 tsp Cayenne. Otherwise I left it the same. oh, and I used boneless skinless chix breasts (2 large). I made some extra seasoning to sprinkle on the veggies and put a pinch in the rice too. cook chix on low heat on the stove top so it doesn't burn.

Garlic Teriyaki Edamame

I had to make the following changes due to what I had on hand: Used low sodium soy sauce instead of teriyaki, cider vinegar instead of rice, and olive oil instead of sesame. turned out good. I will make this again, I would like to get the ingredients listed and see how it is as written. I think it would be pretty good.

Easiest Egg Nog

I wanted to make an eggnog that was healthier so I used this recipe as a base. I'm sorry I'm going to be one of those people who totally changes the recipe and then writes a review... I really didn't change it that much, though. :) Instead of egg, I used egg beaters to cut back the calories and cholesterol. I beat the sugar into the egg beaters, mixed in a dash of nutmeg and tsp of vanilla and a TBLS of Rum. I heated the skim milk in a double boiler with cornstarch to thicken (I used a tsp this time, but next time I might use a little more [mix equal parts cornstarch and cold milk before adding to the double boiler]). Used the double boiler so I wouldn't scald the milk and change the taste too much. heat just until you see a few little bubbles. remove from heat and let the milk cool enough so when you add to the egg mixture it doesn't cook the eggs. mix everything together and chill until cold. garnish as desired and voila...healthier and thicker version of this recipe. Still not as awesome as the real stuff from the store but a pretty decent alternative.
