Simple Garlic and Basil Pesto

Fantastic pesto! I used macadamia nuts because my supermarket didn't have pine nuts in small quantities, and I omitted the Brazil nuts, but everything else stayed the same. It was great. Used it on "Pesto Hamburgers" from allrecipes and my husband said it was the best burger he's ever had.

Salade Lyonnaise

Great salad. I served it along side the "almond pork" from this site. I had never poached an egg before and i didn't know how much vinegar to add to the water and it doesn't specify in the ingredients so I just poured some in. It sort of worked. It really made enough to feed 8 and I have a LOT of dressing left over. If I did it again I would cut the dressing in half. But, very delicious! Thanks. I'll make it again.

Almond Pork

This is so good and I don't even like pork. The only change I made was that I very finely minced actual garlic instead of using garlic powder for the meat rub, because I ran out of garlic powder. Other than that, I changed nothing. I bought pork tenderloin that was already sliced into thin medallions. Served with Salade Lyonnaise (from allrecipes) and french bread. easy and so delicious.

Beef, Burgundy Style

I thought this was OK. Not bad but not great. I did think the wine flavor was a little over powering even after cooking for 3 hours. I don't know that I'll make this again, because I don't think that it's worth the effort but it wasn't horrible. I had a lot of leftovers that I think will probably not get eaten.

Amanda's Stuffed Peppers

The concept is good, but as written it's pretty bland. I think that next time I'll use italian sausage instead of beef. I will make this again, but it definitely needs more flavor. And for all those people afraid of it not cooking through, just take it's temperature before serving to make sure it's hot enough. no need to brown the meat first. I don't think it would be as good that way.

Meringue Kisses I

Easy and good recipe. Although, I got 35 meringues out of this recipe instead of just 12. Maybe I made them smaller, but I did them in "heaping tablespoons" and if I made them so there were only 12, they would have been huge! I've never had meringues that were larger than bite size. Either way, this recipe worked out great. I used dried "just whites" egg whites because I didn't have real eggs. Turned out wonderfully and this was my first time making meringues. I also put them in the oven for 30 minutes after turning off the 375 and then turned the heat to 200 for 30 minutes as another reviewer suggested to make it go faster.

This is a really easy basic bread stick recipe that is very customizable. I've made these as written, as cinna-stix, and with mozzarella cheese in the middle. All ways are delicious!

Butternut Squash Bisque

I had to make some changes due to not having everything in stock in my kitchen, but I think this would be great even as written! I used Olive oil and Smart Balance margarine instead of canola and butter; I didn't have squash, so I subbed 4 cups pumpkin puree that I had frozen from pumpkin pie season; instead of vegetable stock, I used 3 cups water with 3 beef bouillon cubes; I sauteed 1/2 a bag of matchstick carrots with the onion; and instead of cream, I used a few splashes of skim milk and a large spoonful of light sour cream. This was really good except that I couldn't get it completely smooth. It was still grainy, but delicious. I should invest in a sieve....

Bread Machine Pumpernickel Bread

This was OK, though I thought it was too much molasses flavor. I would decrease that next time. I also decreased the cocoa by half and omitted the gluten because I didn't have any. I subbed flax seed for 1 tablespoon of the oil, too. I don't have a bread machine, so I had to change it up a little to bake it like normal.

Tortilla Beef Bake

yum yum yum yum yum. I used garlic and blackbean Artisan tortilla chips from Tostitos. I diced an onion and cooked it with the meat and I also added a layer of corn! SO SO SO GOOD! Thanks!!!

Marshmallow Fondant

I used a version of this recipe and it was really good. I would give it 5 stars with the following changes: substitute shortening for butter and eliminate the vanilla. The reason this recipe ends up not pure white is because of the butter and the vanilla. It tastes great without them and then you get a pure white fondant. It is very messy to make, but easy to work with once it's made. I'll definitely use this recipe every time! This was my first time working with fondant and it really wasn't as hard as everyone said it would be. Thanks! (Oh and since I only had a 10 pound bag of confectioners sugar, I used about 6 cups)

Gobble Up Granola Snacks

These taste really great as written. The only reason I'm not giving them 5 stars is because they are more crumbly than I would like. Not a big deal. The reviewers who suggested using 2/3 of all the wet ingredients probably have it right. I'll try that next time. My husband liked them and he doesn't usually like stuff like that. I added 2 Tablespoons milled flax seed but that's the only change I made. I cut them into rectangles and wrapped each one in saran wrap and I plan to have them as snacks during the week. I'll definitely keep this recipe! It's great.

Green Bean Casserole I

As is, I give it a 3. I added a couple splashes of worcestershire, a few dashes of red pepper flakes, salt and pepper and some shredded mexican blend cheese. I used the cheddar flavored onion stuff because the store was out of the plain kind. It needs something to give it a kick, I recommend worcestershire sauce. I also only used 1/2 cup milk with the soup instead of 3/4 so it wasn't so runny.

Buttery Corn Bread

I'm not a big corn bread eater, but lately I've been craving it. For corn bread, this is pretty good. Not as corn-y as it usually is. I made them in muffin form (made 16) and they remind me of the corn bread muffins at Famous Dave's BBQ Restaurant.

G's Flank Steak Marinade

I made this with only one change: I used 1/2 a packet of dry onion soup mix instead of minced onion. It was fabulous. I marinated T-bones for about 8 hours and then broiled them. I will definitely use this recipe again.

Tortillas II

I don't know what I did, but these weren't that good. They tasted alright but the dough was really dry and I had to add extra water to get the dough to pull together and they were tough to roll out. They weren't flexible (lucky for me I was making quesadillas so they didn't have to wrap around anything. And I rolled them very thin but they got a little thicker while cooking. I don't think I'll even try this one again. It was more work than it's worth.

Traditional Salisbury Steak

This was good, but the gravy is lacking something. It needs a bit of a kick...a little on the bland side as written. I'll play around with it next time. Also, needed an extra 1/4 cup of water in the gravy.

Skillet Corn Bread

I have never made cornbread before because I don't really like it. I don't know why I felt like having some tonight. I made this exactly as the recipe stated because I have no corn bread experience. It was OK. It didn't get fluffy like the photo. I think if I ever make it again I'll add some sugar and/or honey.
