Cool Watermelon Slushes

Reviewed: Aug. 18, 2007
Instead of using ice cubes, I blended in frozen strawberries with the watermelon. Didn't add any honey or sweetener, but did add a small amount of 7Up. Delish!

Pepperoni Cheese Balls

Reviewed: Dec. 21, 2006
I'm very easy to please, but I was disappointed in this recipe. I liked the idea of using pepperoni, but the consistency didn't lend itself to making individual balls. That would have been a huge waste of time. It's possible to make it into one large ball or log, but again, it's lacking something in the consistency so this recipe, as is, would be best used as a bowl dip. I think I would eliminate most or all of the sour cream and butter and maybe try putting some dry Ranch mix or something similar in. EDIT: To be fair, after this was left in the refrigerator overnight, the consistency and taste were much, much better. You could probably roll it into individual balls, but spreading it on crackers is just fine.

Garlic Spinach Balls

Reviewed: Dec. 22, 2006
These were a big hit. They are pretty wet when made into balls but that was necessary to keep them from drying out during baking.

Three-Cheese Spaghetti Bake

Reviewed: Jan. 6, 2007
Oh my! This was SO good. Instead of using spaghetti noodles though, I used shredded (cooked) spaghetti squash. I just placed them on the bottom, mixed the other ingredients, added some cooked ground beef I'd had left from the day before and did everything else the same. It was absolutely delicious!

Asparagus Casserole

Reviewed: Jun. 3, 2006
This was SO GOOD!! Fed a housefull of guests on Easter and it was a huge hit. Very rich, I didn't find it to be bland at all. I used large frozen tailless shrimp. Not an everyday recipe due to the cost and richness, but exquisite for special occasions.

Cherry Fluff

Oh, this was really good! I didn't have any pineapple, so substituted mandarin oranges and also added some mini marshmallows. Everyone ate it so quickly I almost didn't get any!

Hearty Black-Eyed Pea Salad

Reviewed: Jan. 2, 2007
I had great hopes for this salad on New Year's Day but it fell flat with family and friends. The carrots added crunch, but perhaps some celery would have helped. Probably should have added more hot sauce as well or maybe some salsa.

Curried Mushroom Hot Pot

Reviewed: Feb. 24, 2008
I made this exactly as the recipe said and it came out great. We all enjoyed it. I'll bet it would be divine on rice as well, using only about a cup of broth.

Chocolate Peanut Butter Pie V

Reviewed: Sep. 29, 2006
Very easy, very quick. Next time I would put in more peanut butter though because I could not really taste it through the chocolate.

Yummm! This was perfect for using leftover noodles. I didn't have any peas so I substituted broccoli and I also added spicy dill pickles. Fabulous!

Caribbean Sweet Potato Salad

Reviewed: Mar. 23, 2008
This was just fabulous. Instead of boiling the potatoes, I cut them up (used 1 white and 2 sweet) in bite-sized chunks, put them in one layer in a glass casserole dish, covered with water and microwaved for 8 minutes. I followed the rest of the recipe exactly and it was even better than I had hoped!

Garlic-Lime Pork Chops

Reviewed: Jul. 27, 2007
Wow, how nice to find a pork chop recipe that doesn't require cream of mushroom soup or fruit. I didn't have time to marinate, so I poured the mixture over the pork chops and baked at 350 for an hour. They were superb! I also did not have a lime, so substituted lemon juice and did not have any peel. I will certainly use this recipe a lot.

Rave Reviews Coconut Cake

Reviewed: Aug. 18, 2011
This recipe looked so good I wanted to try it for my husband's birthday cake. After reading the reviews, I was concerned about it falling apart and the frosting being too sweet. So, I used coconut milk in place of the water and just 1 cup of coconut in the cake batter. It came out perfectly and was delicious! For the frosting, I doubled and creamed the room temperature ingredients, except for the confectioners' sugar which I added a little at a time until just right. It spread perfectly and was just the right amount. I also didn't bother with toasting the coconut. Everyone loved it!

Garlic Prime Rib

Reviewed: Dec. 30, 2009
I have no idea how a 10 pound prime rib cooked in this amount of time. At the end of this time, my thermometer was not even registering on the numbers yet. It took 2 extra hours for the center to get to medium rare. The marinade was delicious, however. Lesson learned: it's much better to use two 5-pound roasts than one 10-pound roast.

This was a very good recipe. I did decrease the amount of garlic, but added raisins which went wonderfully with the rest of the ingredients.

This was really, really good! I put it in a crock pot, added some extra wine and placed the asparagus on top. Left off the cheese. It was delicious!
