Pork Chops with Apples, Sweet Potatoes, and Sauerkraut

This was a great recipe that I would have used for pork chops but decided to use with a ham instead. I cut a spiral ham off the bone (put the bone in freezer to use for a seasoning later) and put on top of the sweet potatoes, onions and apples. Put sauerkraut on top and then poured some (2 cups or so) chicken broth on top. Cooked for 10 hours while I was at work and it was perfect! My paleo-only daughter loved it, too!

Leftover Halloween Candy Brownies!

Thought I would try this since I have a ton of leftover Halloween candy. Followed the recipe exactly, but doubled it and put in a 9x16 pan. Came out perfectly! I used Reese's pieces, Reese's peanut butter cups, Almond Joys, KitKats, and Hershey bars so there was quite a variety of chocolate and crunch. I still have mega-amounts of candy left so I'm planning to make another pan (or two) and just put in the freezer for unexpected company. Thanks for the great idea!

Beer Margaritas

I've had this recipe forever from my parents but with one big change. Use rum instead of tequila. Then it is called a Boomerang. And it's much better since tequila and I don't get along! Very potent!

Chocolate Sundae Pie

This was so quick and easy and everyone had a fit over it. Tasted like chocolate velvet. I added a thin layer of Cool Whip on top and drizzled chocolate and caramel syrup over.

Creamed Spinach with Jalapenos

This exact recipe has been around for eons, aka Spinach Madeline, and is one of my top 5 favorite foods. You can also use fresh spinach; just use a little more evaporated milk and eyeball it so it isn't too soupy. I never use bread crumbs, just because they aren't necessary.

Rave Reviews Coconut Cake

This recipe looked so good I wanted to try it for my husband's birthday cake. After reading the reviews, I was concerned about it falling apart and the frosting being too sweet. So, I used coconut milk in place of the water and just 1 cup of coconut in the cake batter. It came out perfectly and was delicious! For the frosting, I doubled and creamed the room temperature ingredients, except for the confectioners' sugar which I added a little at a time until just right. It spread perfectly and was just the right amount. I also didn't bother with toasting the coconut. Everyone loved it!

Green Tomato Cake

Oh my! This was excellent! You would never know there were green tomatoes in this cake. I had so many in my garden at the end of the season and was delighted to find this recipe. So moist and good. Forget the icing. I think it would take away from the wonderful taste. Thanks for the recipe!

Garlic Prime Rib

I have no idea how a 10 pound prime rib cooked in this amount of time. At the end of this time, my thermometer was not even registering on the numbers yet. It took 2 extra hours for the center to get to medium rare. The marinade was delicious, however. Lesson learned: it's much better to use two 5-pound roasts than one 10-pound roast.

Slow Cooker Lancaster County Pork and Sauerkraut

Oh, this was so good! I mixed the sauerkraut with the brown sugar, a dash of BBQ sauce, and some leftover cut-up cabbage. I put half of that on the bottom of the crockpot and then put the still frozen pork loin in and the rest of the sauerkraut mixture on top. Then I poured a whole bottle of beer in. I turned it on low before going to bed and let it cook all night and all the next day. It was perfect and perfectly moist too! Definitely a keeper.

Apple, Pecan, Cranberry, and Avocado Spinach Salad with Balsamic Dressing

Oh, this is a keeper! Loved the variety of flavors. I didn't put in carrots, but did add some diced Swiss cheese and also used Raspberry-Walnut vinaigrette. Next time I will try substituting the spinach for broccoli.

Chicken Marsala

This was very good and everyone liked it for Easter dinner. I would not flour it next time, however. That is not necessary at all. Also, I thickened it with corn starch as some other reviewers suggested so I could serve it over pasta, but I would not do that again either since I thought it detracted from the taste. I used lots of mushrooms and some onions and they were really great.
