Banana Muffins I

these muffins were so good~! i used all whole wheat flour, splenda, and dannon lemon flavored yogurt. it was still amazing. i've never tasted such a good fat free and healthy muffin before. 1 cup mashed is about 1 1/2 large bananas. i'll always be waiting for my bananas to ripen so that i can make these muffins! ^^ thanx for this recipe

Smooth Cauliflower Soup

this is a great soup, i tried it with a cup of soy milk, but i think that's what made it not as good as it could have been. otherwise, i love the fact that the soup was CREAMY without milk. i boiled the cauliflower and the other vegetables all together. i removed the cauliflower, pureed it, then i just added it back to the rest of the pot. (drain out a bit of water, tad bit). the water you used to boil with has a nice flavor to it, and adding it with the pureed cauliflower makes it taste good.

Whole Wheat Maple Quick Bread

i love this bread! i ate like half a loaf in a day! i made this even lower calorie than it all ready is: i substituted splenda for the sugar, egg substitute, skim milk, and just a bit of syrup for the taste. this was awesome! so moist, and crusty if you bake it a bit longer.

Cinnamon Swirl Bundt Coffee Cake

omg, this cake is so beautiful! i made this totally low calorie. (24 servings: 70 cals each) substitute applesauce for the butter. substitute dannon light n' fit fruited yogurt for the sour cream (the flavor is very nice in cake) i used egg substitute, splenda for the sugar, and i substituted whole wheat flour and oat bran for the all purpose flour. and it was delicious!

Tofu and Veggies in Peanut Sauce

i liked the taste of this but it was too rich, my brother hated it, my mom thought the idea of a peanut sauce was ridiculous, but my sister really liked it. i was hoping i'd like this recipe becuase i'm a peanut butter fanatic. but i'll have to stick with vegies and tofu plain for now.

Beaker's Vegetable Barley Soup

this soup is AMAZING. the curry powder made my house smell absolutely irresistable. i'm pretty new at cooking, so i haven't been very creative and delicious with soups. but my mother, who used to critique my soups endlessly even said that this was ver delicious. it's a total comfrot food b/c it is very warm, and thick. pressed barley also worked really well, and i didnt' have garbanzo beans, so i subbed them for lentils. and i forgot the pepper. this is a very filling soup. i had it at lunch today at noon and still arne't hungry at 5 pm! =) adding a bit of frozen and thawed tofu is also a nice addition. dont' stop with the curry powder!

Curried Carrot Soup

i usually love cooked carrots, but this soup just made me think of wilted plants. it's not very..... *LIVELY* it's a very downer taste. there was a werid after taste also.

Easy Garlic Ginger Chicken

i used lemon instead of lime. it was still pretty good that way. but like other reviewers, i thought that this recipe calls for too much lime. i couldn't realy taste anything else except for the ginger. it was kind of strong for me, but my family all liked it. i think i'll try it next time with orange juice instead. or actual lime. make sure you use the marinade when you cook, your chicken will be much more juicy that way.

Mom's Ginger Snaps

these are so awesome! my freinds love these very much. they are very strong and are a good cookie for gifts. remember to space them for the full 2 inches when you bake them, and roll the ball really small. rounded tsp is good i think.

Tomato-Curry Lentil Stew

this stew tasted great, but not of curry. it wasn't any more different then other tomato soups and stews i've made before. nothing special. sorry for the not as great review, but i guess i was just expecting something different. it's a very healthy and good recipe though.

Oatmeal Whole Wheat Quick Bread

this bread tastes amazing. it reminds me of the panera whole grain bread, except it's 100% whole grain! baking the bread @ 350 for an hour made the crust hard justthe way i wanted, and since i didn'thave honey, i just used maple syrup. i even omited the table spoon of oil and substitued fat free soymilk for the milk. i justwish the bread rose more, but this is a great recipe

Aunt Teen's Creamy Chocolate Fudge

this is a very easy fudge to make. everything happened just as it was suppose to from the directions, and all of it was gone for the christmas party at chruch. people jsut kept on coming back for more! you just have to remember to STIR STIR STIR cuz if you get a little lazy, the stuff will scorch. i think this is a wonderful recipe.
