Oven Roasted Red Potatoes and Asparagus

Use this recipe for potatoes frequently--never thought to add asparagus! Kept asparagus spears whole; cooked potato pieces covered for 25 min. & increased oven temp. Added seasoned asparagus & roasted it uncovered for 15 min.-browned potatoes, too! Delicious--may add red onion wedges next time in the final roast!

Easy Indian Style Okra

Outstanding. I now keep a jar of the spice mix in the cupboard. This is so easy & I didn't change anything..well, maybe added more spice mix than called for. Keeper!!!

Adobo Sirloin

Amazing marinade. I have used this recipe with sirloin steak; pork chops; shrimp and chicken breasts--all with excellent results. Have my daughter hooked on it & am sending to my son. I always make up the entire can of marinade & keep in refrigerator for the "entree of the day". Equally delicious on the grill or inside on the grill pan! Thanks Tracie--this a keeper.

Coconut Brittle

This is my Father's favorite candy for the holiday. I use a 2-qt. pyrex measuring bowl to cook the brittle in and I use raw virginia peanuts. No hot pan/bowl & I use a wooden spoon to stir. Add peanuts last 2 min. of cooking time. works every time!! Thanks for the recipe post.

Pork Chop and Potato Casserole

Easy, taste was very good but the potatoes & chops turned an unappetizing grey when cooked in the oven (left at 275 degrees for 1 1/2 hrs. while at soccer practice). Will make again in electric skillet or on top of stove. Added some onions and sliced mushrooms.

German Tomato Pie

Used the best late summer tomatoes & fresh Mozzarella--a waste of wonderful ingredients. Maybe if the tomatoes were sliced thinner it would have been better. Added garlic, salt, pepper, and oregano. Still was watery & tasteless--cooled to a very hard crust. May try again in smaller version.
