Hot Peanut Sauce

Easy sauce to make with all ingredients I had in my kitchen! It's become a weekly staple. Make it with tofu, broccoli and noodles and it's amazing. I add some garlic when I'm stir frying the tofu.

Jimmbo's Garlic Knots

I doubled the amount of dough but did about 1.5 of everything else. These were the hit of the party. Had a dinner party with 11 people and these were all gone by the end of the night! Will definitely make again.

Cheese Lasagna

Made this last night for a dinner party. Everyone liked it a lot. I used egg replacer (e.g. Ener-G) instead of eggs, and used the equivalent of around 2 eggs after reading other reviews. Everything else I followed, using a bit more sauce. Easy recipe, good results, I would make it again!

Fruit 'n' Spinach Salad

Good, easy salad. I added a little romaine in with the spinach. Also changed the fruit for what I had in hand - mandarin oranges, apples, dried cranberries. I doubled the salad, for 11 people - and it was nearly all gone.

Vegetarian Shepherd's Pie II

I made this for a dinner I had for several friends and everyone liked it. It presents well and is a good hearty vegetarian dish to serve. I added some thyme and savory to the mixture. Next time I'll probably also add green beans. I added some light butter to the potatoes and next time would probably add some soy milk too.

Hummus III

I make this recipe fairly often. I always make it with a bit less tahini than is called for... I don't think it needs that much, and it makes it a little less fat that way. I also definitely add a fair amount of the bean liquid to make it a more creamy texture.

Pineapple Kugel

I was looking for a typical (but good!) noodle kugel and this was it! I made it with LIGHT butter and it came out perfectly fine, I'm sure no one would be able to tell the difference. I also added raisins which were a good addition and will add them again next time I make it. I'll probably also try it with egg substitute next time.

Dad's Pan-Fried Green Beans

Great easy recipe. I used olive oil. The first time I made it with 2 tablespoons oil. That was too much. I have now made it several times since with just about 1 tablespoon and I think it's much better.

Quinoa and Black Beans

This was my first time making quinoa and I definitely will make it again. I used 1 can beans as others suggested and that seemed just right. One thing I did think though that this is way too much cilantro -- it totally overpowers the dish, and I didn't even use the full 1/2 cup. Next time I will cut down a bit on that.

Mouth-Watering Stuffed Mushrooms

Made this for an office potluck today - and got lots of compliments! Per other people's comments, I decided to cut down a tad on the cayenne, add some breadcrumbs on top, and planned ahead and got plenty of mushrooms (filled about 2 dozen- but to keep the filling recipe constant, used just 12 stems). Also used olive oil instead of vegetable oil (healthier) and would be interested to try next time with reduced/low fat cream cheese to see if it comes out as well.
