Jiddo's Fatayer Sabanegh (Spinach Triangles)
This recipe is nothing like the fatayer filing i make. PEPPER..needs PEPPER..lots of it..freshly ground black and some cayenne... lemon juice, sumac, olive oil...the spinach must be DRY ( I use frozen chopped and squeeze out ALL of the water once it is defrosted )...and more salt...( the dough sucks out the flavouring so the filling must almost be over flavoured for the end result to have any flavour !!! must taste too spicy, too lemony, too olive oily to oniony before you put in the pockets and you willhave perfect end result fatayer

Texas Chocolate Frosting
Love this but made key changes!!!! 1) dbled the recipe for a large 2 layer cake 2) used room temp BUTTER 3) used twice the ammount of cocoa and only 5 1/2 cups of icing sugar ( remember I dbled the recipe ) 4) used 1/2 milk suggested and added same volume of cold strong coffee...any additional liquid needed to smooth out the frosting was cold coffee....I couldnt keep my teenagers away from the beaters and bowl and because of this I BARELY had enough for my cake ( "but mum, that corner doesnt NEED icing " as they licked their spoons and dipped for more )

Baked Ziti I
Everyone loved it. If any of you are familiar with the Presidents Choice line of products, tastes very close to the Baked Penne but without the work. Next time will add more cheese.
