Peppered Shrimp Alfredo

Delish! The amount of cayenne pepper was perfect for my taste, but the kids thought it was a little spicy. I'll probably reduce that the next time around. Otherwise, it tasted terrific!

Spinach Bacon Quiche

I think there is too much spinach in this recipe and not enough egg. Next time, I might 1/2 the spinach and maybe add an egg or two. I liked one reviewers idea of putting the spinach and milk in a blender. My quiche also came out watery when we cut into it, even with the knife coming out clean. It was done, but I agree with other reviewers that there may be too much milk. Plus the spinach may have needed more draining, although I squeezed it out as best I could. We like more bacon, so next time I would probably put at least 6 pieces in there. Great with a home-made crust. We'll make again with these modifications.

Eggnog Cheesecake III

This was divine! I made it with 2/3 low fat cream cheese and 1/3 regular and it still tasted rich and creamy. I also took another reviewer's suggestion and added come cinnamon and nutmeg to the graham cracker crust. This has become a staple for Christmas dessert.

Big Smokey Burgers

These burgers were delicious! It really jazzed up the normal boring burger recipe. I added a little bit more of the peppers because we like it spicy. I didn't use onions since my family won't eat them, and I tried substituting onion powder instead. Since I love onions, I felt that the onion flavor still wasn't enough. If I were making it for company, I'd definitely use the grated onion next time as this would make them perfect! Thanks for the great recipe!

Chipotle Shrimp Tacos

This recipe was soooo goood! I added one more pepper than what was called for and it had a great kick, which is how we like it. We also served these with a dollup of sour cream and chopped avacado which helped to cut the spice perfectly. We'll keep this around and make for company the next time!

Pistachio Crusted Chicken

Loved this recipe. We used unsalted pistachios to keep the sodium content down, and it was still good. Served with roasted garlic cous cous and corn. The family loved it.

Risotto with Sun-Dried Tomatoes and Mozzarella

I have made this twice and both times I ended up adding more liquid than it called for because it took forever for the rice to cook. I added some white cooking wine along with the vegetable stock for added flavor, and we cut back on the mozzarella as others suggested. Both times, my family got too hungry waiting so we didn't cook the rice until tender because it took at least 40 minutes and counting. We liked the flavor, just not really patient enough to wait for the rice to cook. Maybe one day when I have nothing better to do we'll make this again. Not a good recipe for a busy family.

Chicken Scampi I

I enjoyed the flavor of this chicken, but I think the kids and my husband thought the flavor was a little too intense. They still ate it though. I made double the sauce so I could discard the marinade and use the reserved other half to pour over the chicken at the end. It took a little less time to cook the chicken (about 12-13 minutes), so some pieces were overcooked slightly. Next time, I might reduce the oregano, since I'm not a big fan. We served the chicken over top of toasted pine nut cous cous with steamed brocolli, and poured the sauce over top on each plate. We'll definitely make this again, with some minor tweaks.

Tortellini, Steak, and Caesar

Loved this recipe. It's going to become a staple at our house. Anything that pleases the husband and the kids is worth keeping. Everyone, even the baby, asked for seconds and thirds. To make it even easier, I substituted a bag of romaine lettuce that's already torn into pieces and I used cherry tomatoes instead of cutting up large tomatoes. Served with garlic bread and it was a real hit!

Simple Ranchy Breaded Fish Fillets

This recipe is very tasty. Really dresses up any boring white fish. It even makes it tasty enough for my 1- and 3-year old to eat fish with no complaints. The only thing I changed was I added a little more oil to the seasoning mixture. Otherwise, it's a little too salty and doesn't go as far. We'll make this one again and again!

Crustless Spinach Quiche

This recipe is so yummy and sooooo easy! We love the flavor of the Meunster cheese. I love how it's so versatile. I added some chopped roasted red peppers to the recipe and it was delicious. Bonus--I got my 1 year old and 3 year old to eat spinach without any complaints! The whole family loved it.
