Oatmeal Peanut Butter Cookies III

Instead of quick oats, I ran a knife through old fashioned oats. No other substitutions otherwise. Baked for ten minutes. Delicious frozen! 9.24.11 My next door neighbor mentioned that she loved these cookies so I made her another batch for her birthday. Made few substitutions this time: used all natural peanut butter (all I had on hand), upped the salt, ground up half the quick oats in my coffee grinder (to create a finer textured cookie) and divided each dough ball made by my cookie scoop in half. Perfect size for sandwiches! Baked at nine minutes.

Easy Sugar Cookies

My batch produced 30 cookies with my cookie scoop. Baked at about 12 minutes. Very buttery. Benefited from the 1/2 teaspoon of salt. Update: Made these again with an extra egg and 1/2 teaspoon of salt. Rolled a few in cinnamon sugar and frosted the rest. They were gobbled up! So easy, especially since I had to cream the butter and sugar by hand.

Robbi's M&M Cookies

The cookies were very crumbly and fell apart. (I used butter flavored shortening.) The girls in my cooking class whipped these up and though they ate them, they didn't rave. Won't make these again.

I am so tired of dense banana breads and was hoping that these would be lighter. And they were! The recipe made 24 muffins. Maybe cut down the sugar a bit next time.

Ultimate Maple Snickerdoodles

I just opened a jug of grade B maple syrup and wanted to make cookies. These looked easy enough and I had all the ingredients. The dough came together quickly and the cookies cracked beautifully (much better than my snickerdoodles.) However they are very sweet. Next time I'll cut down the sugar and I believe they'll be perfect.

Mall Pretzels

These turned out really well! Especially after dunking them in melted butter and tossed in cinnamon sugar. Letting the dough rest before rolling them out into ropes is key as well to getting the perfectly sized pretzels.

Cake Mix Cookies VIII

Instead of butter, I mixed 1/3 C oil into a box of milk chocolate mix, vanilla, dash of instant espresso powder, eggs, crushed Heath bars and a handful of pecans. Refrigerated the dough overnight and was able to form stiff balls before baking. Crusty outsides with soft, tender insides. Will make again when too lazy to bake from scratch. Update: While just okay warm or at room temp, these cookies taste amazing frozen! Chewy and crunchy with the pecans and toffee. Perfect summer treat.

Easy Key Lime Pie I

I made my own graham cracker crust and pressed them into cupcake liners. Filled 2 cupcake tins with 4 yolks, 1 C of juice (30 key limes) and 2 cans of condensed milk. Into the oven for 15 minutes and voila! Perfect portions of key lime pie. I froze a dozen of them for later snacking. I plan on serving with homemade whipped cream and toasted shredded coconut. If served plain, the key lime is quite tart.

Sour Cream Chocolate Frosting

Best chocolate frosting I've had in a while! Great thick texture and not overly sweet. I added a pinch of cinnamon and 1/2 tsp of instant espresso powder to deepen the chocolate taste. I recommend gradually adding the powdered sugar and tasting until it gets to the right consistency/sweetness.

Cinnamon Raisin Bread I

I halved the recipe and made two 8x4 loaves and a smaller loaf. I added 1 T of cinnamon to the flour mixture and kept the original cinnamon sugar. Delicious! My loaves don't have the pretty swirl as I messed up the dough and ended up just dumping the cinnamon sugar in and baking. Tastes great with butter!

Downeast Maine Pumpkin Bread

Such an easy bread to whip up! Perfect for fall. And all the ingredients are probably in your pantry right now! I added a cup of toasted, chopped walnuts and a cup of dried cranberries baked in three 8x4 loaf pans for one hour and five minutes. I sprayed the pans with Pam and the loaves came out easily.

Jay's Signature Pizza Crust

I found that the dough that I let sit overnight in the fridge rose better the next day. I prebaked it for 10 minutes and then topped with toppings and baked for another 15 minutes. Delicious! My parents can't stop raving.

Apple Pie by Grandma Ople

I successfully made my first apple pie thanks to this recipe. My sauce did thicken up a lot and caused some concern but after baking, turned out fine. I added vanilla, cinnamon, nutmeg, allspice and cloves and the house smelled wonderful while it was baking. I did make sure to place the pie plate on a foil lined cookie sheet, otherwise the juices would have leaked all over the oven. The apples were very tart but went well with the vanilla bean ice cream. Good contrasts.

Mrs. Sigg's Snickerdoodles

Mine didn't spread out at all and were thick, crunchy cookies. I didn't chill the dough so was surprised that they didn't spread more. Tasted fine (no bitter aftertaste from the cream of tartar) but I wanted flat, chewy cookies. Next time I will press down with a glass before baking. Also, they were great fresh out of the oven but within minutes, they had hardened. Update: Changing my review to five stars! Baked another batch and made sure to flatten the dough balls and took them out of the oven even though they still looked wet on top. This yielded the perfect, chewy, flat cookie I've wanted!

Caramel Popcorn

I was reluctant to try this recipe as I have burned caramel before. But it was a slow Sunday afternoon and I had the ingredients on hand and threw it together. Simply amazing...buttery and decadent! I went with a full cup of butter but will halve it next time. I didn't want to take any chances and alter the recipe. I popped 1/2 C of kernels in my Whirley Pop and it was the perfect amount. I added two cups of peanuts as well. Can't wait to make another batch!
