Easy Tuna Casserole

Husband said "yummy" which is a huge compliment. I think this twist of a standard tuna noodle casserole is wonderful. The french fried onions made it special. I wanted more tuna so added an extra can. Didn't have more soup so added 3/4 cup of FF half and half and a pinch of cayenne for my taste. I feel these changes were not enough to not rate this recipe. We shall make it more often.

Butternut Squash Soup II

I made this today. The first time I make a recipe I try and follow it exactly before I make changes so my review is based on the original. However, this time, I made a few (very few) changes but I don't think it made that major a difference so I will rate away. I began by piercing the squash and microwaving it for 10 minutes. Easy-peasy pealing. I did not use celery as I do not like celery in things and I did not use the regular potatoes. I used a sweet potato as my squash was kind of small and I thought this would help. I did the rest the same, but added about a tablespoon of freshly ground ginger and a dash of cayenne pepper. I served it with a dollop of sour cream. The soup was amazingly good. Oh, I used my stick blender to puree. I don't think the changes I made took that much away from the original recipe. It was excellent. Thank you for sharing. I will not buy Trader Joe's in a box any longer.

Slow Cooker, Easy Baked Potato Soup

Thank you. This is one of the best recipes I have gotten off of this site in a long time. Made this for the first time today to serve to company and everyone loved it. I followed the recipe almost exactly. I substituted low sodium chicken broth for the water and bullion. I did make a mistake though. I was on a roll adding ingredients and put the half and half (non-fat) in the soup for the full cooking. It made the appearance of the soup a little different but the taste was still very, very, good. I did have to add some instant potatoes at the end to thicken it up. Very, Very good stuff. I served it with a Caesar salad and beer bread. Next time I am going to double the recipe to have more leftovers. Actually, we are going away for the weekend and I think I will make some of this to take with us. Excellent.

Pork Fried Rice

Made this tonight following exact recipe (doubled it) and used left over pork chops. Oh, one exception, I did not have green onions, so used some onion powder. It was very good. My husband who doesn't like to stray from the normal rotation was impressed as well. It was nice because I had all of the ingredients and it was pretty easy. I've made Pork Fried Rice in the very distant past but this one seemed easier and tastier. Thanks. I'm happy to have found another entry into the rotation.

Ginger Glazed Mahi Mahi

I followed the ingredients part of this recipe exactly, but baked it instead of frying. I looked at a lot of reviews that spoke of baking so followed them. I baked at 400 for 17 minutes. That part was perfect. In my opinion and my husbands, there was nothing that exciting about the taste. Two things that were directly related to our problems: 1) my husband can't stop thinking about macadamia nut crusted Mahi Mahi, and I am not a fan of Mahi Mahi in general. That may have spoiled a more positive review. One other point, it was salty and I used low sodium soy sauce.

Slow Cooker Baked Beans

Loved them. This was such an easy recipe. I threw in a ham hock as that's all I had. I love a little smokey flavor so wasn't concerned. Took them to a barbeque and they got rave reviews. Because I had a busy day before the bbq, I chose to put them in the crock pot the night before and let them cook all night. Worked perfectly.

Refried Beans Without the Refry

I am giving this recipe for starts because it gave me a great base for refries in a slow cooker. I wanted to follow the recipe to a "T", but couldn't do it. After making these for years with an old family recipe I couldn't totally ignore the bacon grease. At the end - needing some flavor I added about 2 tablespoons and stirred in. Plus the tip I got for using the hand immersion blender was worth the whole four stars. Don't know why I never thought of that before. Here are my adjustments for anyone interested. Definitely use at least 2 cups of chicken broth instead of all water and wait until the end to salt and just salt to taste. I also used a whole jalepeno, 1 1/4 tsp. ground cumin, 1/2 tsp chili powder,and no black pepper. Again, just my taste. Anyhow my husband and I have been sitting here eating them after taste testing. Oh, I did NOT take out all of the liquid I just scooped out as much as I thought I wanted to and blended away. Enjoy.

Laura's Quick Slow Cooker Turkey Chili

Wow. Quick, simple, healthy with some heat and very yummy. It was great. I did add one can of "hot" diced green chili's, but otherwise made exactly as written. Topped with shredded cheddar, a little sour cream and a few crushed Frito Corn Chips.

Pork Chop and Rice Casserole

It was pretty good. I followed the recipe exactly; oh wait - I did season the chops a little. The rice mixture was perfect and very tasty. The pork could have used even a little more seasoning than I gave it. Next time I don't think I will brown the chops as long, if at all. Although they were pretty tender, I thought them to be just a little dry. Although I have tried similar recipes, this is the best version. Just a tad more seasoning tweaking to be done.

Baked Kale Chips

I bought a bag of kale at the grocery store not knowing what to do with it and then I discovered this recipe. I made it and it was sitting on top of the stove cooling off. My husband came through and grabbed a couple before I could tell him what it was. He promptly proclaimed "this is good - what is it?" Then I told him. I'm baking more as I write this. It's a keeper. Healthy chip style snack. Thanks

Pesto Turkey Burgers

These were extremely good. The only change I made was to cut down on the salt. I figure people can always add more. Thank you for these. I will make them again and again. Didn't even use buns - the burgers are pretty big and filling.

Well, I've made these twice now, as I thought the first time I made a mistake because they weren't very good. Made them again today, followed the recipe to a tee and still no one liked them. Sorry, for the time involved I'll open a can. Very disappointed.

Oven-Barbecued Pork Chops

quick, easy, and very tasty. I followed the recipe precisely. I did cook them only about 25 minutes though and they were perfect. I didn't use the really thick ones and didn't want them to dry out. I should have made more for leftovers.

Marinated Tuna Steak

I have a ton of tuna in my freezer, compliments of a fishing trip, so thought this might be a good way to try it. I mixed the marinade reached for the thawed tuna and discovered I had thawed the salmon by mistake. So, FYI, it tastes great on salmon as well. Thanks for the recipe.

Chutney Chicken

Well, I had to only give it 2 stars because I thought it was "ok" but my husband did not care for it at all. He was not into the taste of the sauce. There was something "off" about the taste to me, but I couldn't put my finger on it. I guess it just wasn't for us. I made it exactly as written.
