Pumpkin Cream Cheese Muffins

Great recipe I used pumpkin pie filling instead of purée and it was fantastic. I did cut down on the sugar a bit to compinsate. Made baby muffins too and cooked for about fifteen min.

Broccoli Salad

Great recipe! I didn't have any cheese (well, just mozza, but I didn't think it would have a strong enough flavor to hold up to the salad) and it was still wonderful without. I bought a bag of real bacon bits to keep in the fridge for this recipe. A+!

Easy Microwave Chocolate Cake

Considering the easy factor, I can't complain!! Yes, I've had better chocolate cake, but never in 1 minute of prep and 3min in the microwave!! Taste was just what I needed to curb my sweet tooth.

Kaese Spaetzle

Really really good. I attempted using a colander, and I didn't work out very well. I ended up just pinching off little uniform pieces, and it worked out fine. In the future, I would get a specific spaetzle maker to make the process simpler. A delicious recipe!

Black Bean, Corn and Turkey Chili

This is a wonderful recipe. I followed it as written and had wonderful results. The only thing I had to change was I used red kidney beans, instead of black. I only had the red beans, and the taste was still perfect. Thanks for the great recipe!

Spinach Stuffed Chicken Breasts

A pleasant change from a normal chicken breast. I made a few substitutions, to cut a few calories. I only used about 1 tbsp of mayonaise. I also added about 2 tbsp of greek salad dressing. I mixed the mayonaise, salad dressing, sliced fresh spinach, feta and garlic in a bowl. I ommited the bacon all together. I sliced large pockets into each breast (I did 2) and stuffed them with the mixture. I seasoned the outside of the breasts with S&P and a shot of PAM spray (so it would brown a bit). Served with Penne, in a sundried tomato alfredo sauce and roasted brussel sprouts. Yum!

Baklava

Oh. My. Gosh. This is the best dessert I've ever made. It's time consuming, but simple. I made the recipe exactly as written and wouldn't change a thing. I'm 100% happy with the results. Everyone who had some was blown away that I made it. I served the triangles individually with cupcake papers. It made it a bit cleaner to eat.

Best Brownies

Wow! I pulled these brownies out of the oven about 20 min ago, and I'm ashamed to admit how much of the pan is left. :) Every bit as good as the title reveals. I baked mine for 25 min and the center was soft and gooey and the edges were chewy and delightful. Everything I expected from a brownie. I'm just dissapointed that I didn't have a high quality vanilla ice cream to mix with the warm-from-the-oven brownies.

Lemon Syllabub

Very delish! I changed the presentation a little bit. I put sponge cake in the bottom of a parfait cup, then a layer of fresh blueberries, and then topped with syllabub and a few more berries. It was wonderful!!! Although, with the added sugar from the cake and berries, in the future I would reduce the sugar added to the whip cream mixture, as it was quite sweet. Overall though, it was a huge hit, and I will certainly be making it again.

Hearty Turkey Stew with Vegetables

One of my favorite all-time recipes. Be sure to use fresh uncooked turkey to get the melt in your mouth texture. We also sub red bell pepper, for green, since we prefer it.

Hearty Tuna Casserole

Due to personal preference, I used a can of condensed cream of mushroom soup, instead of mayo. I also sauteed some onions, fresh mushrooms, and 1 red bell pepper, then added it to the noodle mixture with some green peas. Wow...the red pepper was delish. I highly recommend trying it. Very tasty recipe. *****

Tortillas I

Being lazy inspired me to try this recipe. I did not feel like going to the store, just to buy tortilas, so I decided to make them. I was pleasantly suprised by how simple and quick they were to make. I'm sure my technique isn't perfect, but I did find them a bit heavier than store bought. I rolled them out very thin, but I didn't find that they shrunk very much. They had a much fresher and cleaner taste, though. And that was certainly worth it. Very good. I will definanty be making these again.

Fast and Easy Pancakes

I found this to be a rather dense pancake. I followed the recipe exactly, didn't overmix, but I was still left with a flat, thick, bland pancake. I really doubt i'll make this again.

Pasta Shrimp Toss

Wow, this recipe is really special. It is my boyfriends absolute favorite recipe. He claims that it is better than anything he has ever had while eating out. I love how simple is is, and I love all the fresh tomatoes, especially how healthy they are. I always make more sauce than called for. I find that I can cut down on the butter to about half, and use part light cream and part 1% milk to cut on calories.

Swiss Chicken

I thought this recipe was just ok. There was WAY too many breadcumbs. The amount could easily be reduced to 1/3 of the called for amount. The excess crumbs turned into a soggy paste. Also, the Italian breadcrumbs really contributed to the very very salty taste of the dish. I think this could be a five star recipe with a few personal changes.

Delicious Ham and Potato Soup

Wow! I had a huge smoked ham that I made, and then was stuck with lots of leftovers. So, I needed a recipe to use it all up. This was AMAZING. So rich, creamy and comforting. I will be making ham on a regular basis now, just to make this soup. 5 STARS!

Chicken Cacciatore

I found this recipe to be very unique. I have never had anything quite like it. The taste is quite rich and complex. I was really amazing that I had cooked something so interesting. The taste was pretty good for me, although I wasn't really able to eat a lot of it. My boyfried found it to be very good. We substituted boneless chicken thighs since that is what we had in the freezer. A nice recipe and a great excuse to buy a bottle of wine.
