Raspberry Oatmeal Bars

I make these often and they always disappear quickly. My own special touches: after spreading the jam, sprinkle about 1 cup of white chocolate chips. Then, I add 1/2 to 1 cup of chopped walnuts to the remaining cake mixture for the topping.

Spaghetti Salad IV

This is especially great for summer, because you can make a large one, and keep it in the fridge for a few days. I thaw cooked frozen, peeled shrimp and add it to make a great summer meal. Everyone loves it!

Pub Pizza

When my children were younger, I often made these when their young friends would visit. I'd set out an assortment of toppings, including ricotta cheese, broccoli, fresh spinach leaves, pepperoni, crumbled bacon, you get the idea - whatever I had in the fridge or freezer. The friends would take courage from the selections my kids would make, since they were old pros at this, and since they were the creators, usually picky eaters would actually eat these fun lunches. The parents loved the ideas, and many called to thank me! Try it on your own fussy eaters. The trick is to make the oven hot - 400 or 450; they take only a few minutes to cook, and the pita won't dry out.

Thirty Day Friendship Cake

I began making this cake years ago, and usually bake up 2 or 3 when the fruit is ready - it freezes so well! One time, I accidentally grabbed BANANA pudding, instead of vanilla, and said, what the heck, it's just another fruit! I was so happy with the result, that I make it that way all the time now!! Try it, you'll see!

Ricotta Cake

I've made this several times and always get raves! It's so moist. Try cutting the cake into squares and serving in paper cupcake liners. People will think they come from a fine bakery!!
