Sombrero Fajitas

Love this recipie! It's quick - we were eating within 30 minutes. It's delicious. It's flexible - you can use what you have on hand. I used taco seasoning because I didn't have fajita seasoning. I didn't use the bacon and it was still ole! I ate mine on a tortilla - I think he ate it right out of the pan it was so good.

Lazygirl's Ground Turkey Stroganoff

This is a definite keeper! So easy, quick and tasty makes it 5 star in my book. It is the kind of recipie which handles substitutions and variations very well. I didn't have cream of mushroom so I used cream of chicken. I'm looking forward to trying it with the mushroom soup. I did use broth instead of water and will add some sour cream next time. Maybe some grated carrots, a dash of worchestershire......whatever! Thanks Lazygirl! You're my kind of cook!

Tangy Chicken Breasts

Surprisingly tasty for such an easy to put together marinade. I also used only 1/3 C of each ingredient and added minced garlic to the marinade. I sprinkled the garlic powder along with back pepper directly onto the breasts. I only time to let it sit in the marinade for about an hour. Would like to try it again after marinating overnight!

A Good Barbeque Sauce

I love this recipe. It's simple to make with ingredients most of us already have in the kitchen. Best of all it tastes good! I made it the first time with the cola and the second time with Mello Yello. That was good too. It doesn't seem to matter which beverage you use. The 1/2 tsp hot sauce gives it just the right blend of hot and sweet for us.

Slow Cooker Spare Ribs

Homemade Chicken Parmigiana

What a great, easy-to-make recipe! Love how easy the sauce is to make. The first time I made this I used sour cream as I didn't have heavy cream on hand. The second time I made it with the heavy cream and found that I liked it with the sour cream better. I never dreamed that chicken parmigiana could be so easy to make!

Glazed Meatloaf II

For the first time ever, I went back for seconds on meatloaf. The recipe stands as written. However, I added chopped red and green peppers and grated carrot to the mix. Hubby doesn't like sweets so I cut the brown sugar almost in half but he still thought it too sweet so next time I will try just a TSP of sugar. Oh I almost forgot! I only had 1 1/2 lb of hamburg so I added 1/2 lb of soy meat substitute. (soyburg?) and I used 3/4 c. oats instead of bread. Can't wait to have glazed meat loaf again!

Tofu with Pork and Cashews

I liked this recipe very much. It is easy to make and pretty tasty. I would not cut the chili sauce or soy sauce and would probably increase the ginger because I thought it could use a bit more flavor. I'd also let the tofu soak in the broth mixture before cooking it. I will definately make again - perhaps adding mushrooms and shredded carrots to the pot next time.

Ginger Pork

This was very easy, fairly quick and delicious! The hubby took the left-overs for lunch and called while he was eating to tell me how much he was enjoying it. I used fresh ginger, vinegar instead of sherry and canola oil instead of peanut oil 'cuz that's what I had. At first I didn't think it was spicy enough but changed my mind before I finished. This is a great way to cook pork tenderloin - definately a keeper for me!

Pan Fried Spinach

I love this recipe because it's easy to prepare, delicious and can be modified easily. We had lots of fresh spinach from the garden and were looking for a way to prepare it other than boiling. I sauteed the garlic and crumbled bacon in the bacon grease with just a splash of olive oil. Didn't have sweet onion. I just sauteed the spinach about 2 minutes until it just started to wilt. I didn't lower the heat or cover the pan for 5 minutes. I finely chopped about 3 mushrooms and just tossed them into the hot spinach in the bowl and the 'shrooms cooked themselves. Seasoned it all with a little lemon pepper. Everyone loved it.

Spinach Brownies

I had alot of fun watching people's faces when I asked them to try a spinach brownie! They were easy to make even though I used fresh spinach from the garden and had to do alot of chopping. I had provolone and cheddar jack in the fridge so I used that. I added 1/2 tsp of nutmeg but would add 1 tsp next time. There will be a next time with these. They are fun! The texture is remarkably brownie-like - especially if you think "brownie" while you are eating it. I agree that crumbled bacon would be a nice addition and I will remember to add the onion next time too!
