Pop's Dill Pickles

Reviewed: Aug. 5, 2014
Pickle were crisp and tasty but felt they were a little too salty for my taste. Per other reviews cut back on sugar and that may account for the extra saltiness. Maybe sugar is needed to balance that. Next time I will cut back on the pickling salt. I also added pickle crisp!

Spaghetti Carbonara II

Reviewed: Apr. 22, 2014
Very good recipe. I used chicken broth instead of wine due to preference. Due to how many I was feeding I only needed to use 3 eggs to 11 oz of pasta with all other ingredients staying the same. and the sauce was creamy and delicious. I followed review and added cheese to beaten eggs prior to mixing in pasta...it helped to not curdle the egg. My husband...who hates pasta has requested this recipe again. Nice recipe. I only made changes due to needed portions and lack of wine!

Debbie's Amazing Apple Bread

Reviewed: Oct. 6, 2013
Like other reviews cut the salt back to 3/4 tsp. Also added a dash of nutmeg...for my taste. It is a good moist bread with and nice crust. Will definitely make often because it is so very easy to put together.

Moist Chocolate Muffins

Reviewed: Aug. 5, 2013
I chose this recipe because I had lowfat vanilla yogurt I had to use up. So this is my spin....I used 1 cup vanilla yogurt and omitted the vanilla extract. I did not have chocolate chips so I used 4 squares of bakers semi sweet chocolate chopped into small pieces. I added 2 T. of additional cocoa to the 1/2 cup called for. I added an additional 2 T. milk to the 1/2 cup called for as well. Per other reviews I did add 1/2 tsp salt as well as adding 1 heaping tsp of instant coffee to my liquid ingredients. I was careful not to over bake and it came out with a good moist muffin texture. And with the additional cocoa it have a nice chocolate taste. Will definitely make again. My hub suggested a frosting or glaze and maybe an addition of nuts...hhhmmmm?

Breaded Parmesan Ranch Chicken

Reviewed: May 28, 2013
I cut butter to 1/4 cup and added 1 T. olive oil and garlic powder. I brushed butter mix on one side of chicken and only coated one side of chicken with crumb mix. Was worried about bottom being soggy. Glad I did that! Was just as good. Added fresh parsley to coating mix too. Delicious!

Southern Pimento Cheese

Reviewed: May 7, 2013
Very Good lots of flavor. Do not use pre-grated packaged cheese...It makes a difference. I did follow reviews and add 1-2 drops of worcestershire sauce and I used my own put up roasted red peppers as that is what I had on hand. Worked just as well. Agree that the extra sharp cheese is best. The only thing I would change for next time is to back off the garlic powder just a bit as it lingers in the aftertaste. I wouldn't omit it totally though. Even better after sitting overnight.

Italian One Step Casserole

Reviewed: May 6, 2013
Very good flavor for very little work! The only change I made was to use a red onion. Mix veggies well with loose (uncooked) sausage. Poured on only used 8 oz. of my own canned crushed tomatoes. Added some garlic powder and sprinkled with dried basil instead of oregano (just preference). Baked covered one hour until veggies tender, then uncovered until sausage well browned. Hubby called it an "again" meal!!!!

Chicken Tikka Masala

Reviewed: Dec. 3, 2011
If you follow recipe for salt amount you will not be able to eat it. I only needed 1/2 tsp salt for marinade and then another 1/2 tsp salt for sauce. Because of my own taste I halved the cinnamon and cumin in the marinade and the cumin in the sauce. That is not a flaw in the recipe...just my own taste! I also added 1/2 tsp cayenne pepper to sauce as well. Served with Jasmine rice because that is all I had on hand and grilled Naan Bread. Very Very Very Good meal!!! Family called it an "again" meal!!!

Carrot Rice

Reviewed: Jun. 3, 2011
I sauteed veggies in a little olive oil and then added butter just before tossing ingredients with the rice. I grated my ginger on a zester to avoid chunks of ginger that were mentioned in other reviews. Rice was moist and delicious. Hubby wants it again!

Slow Cooker Homemade Beans

Reviewed: Jul. 2, 2010
Followed advice from previous reviews. Soaked beans overnight almost 12 hours. Then brought beans to a boil and then simmered on low for one hour before putting in crock pot. Followed reciped exactly, sauce was excellent. Cooked 4 hours on high and then 2 hours on low. Beans were perfect. OH! to avoid sauce being to watery I put paper towels over the crock pot before putting the lid on to absorb condensation that gathers. I do that on alot of my slow cooker meals to avoid watery sauces, etc. Will definetly make again!!!

Anise Biscotti

Reviewed: Dec. 12, 2009
I followed this recipe exactly. Baking time and all. Do not be tempted to add flour or bake longer. Due to my own preference of not liking anise seed I did omit them. Make sure your fingers are moistened in forming the dough logs. My mother in law, an old school italian said they were perfect, just like the "old days". Thirty years I can't count on one hand that she thought I got it right!!!! Yummy!

Cranberry Applesauce Muffins

Reviewed: Apr. 15, 2009
These came out perfect for me. Very delicious. I followed the advice of others and used 1 1/4 c. applesauce but used the full 1/3 c. oil. I also added 1/2 c. finely chopped dried cranberries instead of fresh. (Since I don't care for the texture of nuts in my muffins but like the flavor of the nuts I also added 1/4 very finely ground walnuts.)

Sloppy Joe Sandwiches

Forget Manwich...these are the best! Followed recipe exact except for adding 1/2 small minced onion to the meat after it had browned. Very good, very easy! Easier than opening a can of manwich sauce.

Simple Scones

Reviewed: Jan. 4, 2009
Very delicious Recipe. My husband loved them! I was always afraid to try a scone recipe but this was so easy. Followed recipe exactly and flavored them with 2 t. orange zest and 1-2 t. orange juice. Brushed the tops with egg wash and sprinkled with sugar. Will try this recipe with other flavors. I bet the sky is the limit with what youcan flavor with. Using the food processor is a good idea BUT only if your processor can accomodate the amount of indgredients. Parchement paper is recommended!!

Jif® Peanut Butter Blossoms

Reviewed: Dec. 20, 2008
yummy yummy. I only had regular crisco so I cut back on the shortening by two tablespoons and added two tablespoons of butter. Make balls a bit smaller than one inch, when I made them bigger the chocolate kiss looked lost in the center.

Snickerdoodles II

Reviewed: Dec. 18, 2008
These seemed to be a little flatter than recipes I tried before. I used butter instead of shortening and added vanilla. I think the vanilla took away from the classic taste of a snickerdoodle. Also baked for 11 minutes. The first batch seemed a little soft.
