Tilapia Soft Tacos with Chipotle Cream

An incredible combination of flavors! You can eliminate the cilantro and chipotle without sacrificing flavor. Because we had no chipotle peppers, I added approximately two additional tablespoons of olive oil while cooking, and then sour cream to the remnants to make a sauce. Even our five year old loved it!

Black-Eyed Pea Salsa

Normally, I don't look forward to eating black-eyed peas on New Years Day, but I tried this recipe to get rid of some stored cans of jalapeno black-eyed peas before moving, and Wow! I loved it, my husband loved it, and even our 2-year-old son ate some. And now that I'm pregnant, I'm actually having cravings for this stuff! Thanks for sharing, and especially for the *healthy* craving!

Italian Roast Beef I

WOW! This was the best roast beef I've ever tasted! I did not have bouillon, so I simply salted the water. I only had about 1.5 lbs of shoulder roast, so I halved the recipe, which turned out great for my spice-loving family. As others recommended, I baked it and added an onion to the roasting pan. On a scale of one to five, my husband gave it a ten.

Thanksgiving Meatloaf

This is really a fantastic base recipe to use, and it's very easy to experiment with. I halved the recipe (only had a little over one pound of turkey) and replaced the chicken stuffing with cornbread stuffing. I also added one sauteed onion, a can of stewed crushed tomatoes (drained), 1/2 tsp. marjoram, and 1/2 tsp. garlic powder. It's an eclectic assortment of stuff, but my husband and two-year old son loved it, and it was much healthier than the food my son normally loves to eat. I covered it with foil while baking, but there were so many juices that I would recommend covering it for only about half the bake time if you're concerned about dryness.

Greek Style Potatoes

This is my favorite potato recipe! It tastes great with sauteed or caramelized onions, served either on the side or stirred into the potatoes. I've even made the recipe without bouillon a few times, adding just a little salt to the water, and it doesn't compromise the taste much at all. Thanks for such a great recipe!
