This is the best banana bread recipe I've tried, ever! I did make some changes -- I substituted applesauce for 1/2 of the butter, used lowfat sour cream, and cut the sugar to ~1.5 cups (the applesauce & bananas sweeten this bread plenty). It turned out great -- like I just got it from Starbucks!
Also, this freezes really well, just wrap in Saran wrap & foil, and put in a ziploc bag. Perfect! **BY THE WAY: Until recently, I thought my oven and I were a disaster with quickbreads (pumpkin, banana, etc) -- then found that buying brand new baking soda and powder makes ALL THE DIFFERENCE (thanks, Mom). You should replace it every year at least (look at the expiration date) -- now you know, too!
