Slow-Cooker Chicken Tortilla Soup

This was fantastic. I didn't use the slow cooker, and used chopped rotisserie chicken to save time. I added a can of rinsed black beans and 16 oz of frozen corn, and used a 15 oz can of green chile enchilada sauce. I just topped with tortilla chips to save time and energy -- it was a big hit! Adding this to my recipe box.

Cucumber and Tomato Salad

Super easy to make - I used two cucumbers, four tomatoes, 1/2 red onion and instead of tofu, used herbed feta cheese. Drizzled Newman's Own Balsamic Vinaigrette over the top and tossed. I was unsure about the kidney beans but we tried it and was a hit! Might also try kalamata olives next time for a more Greek-style salad with the feta.

Garlic Chicken Fried Chicken

Great -- I loved the garlic. I did cut down on the salt and pepper by 1/2 tsp each, and added about 1 tsp of Lowry's seasoning salt. Make sure the heat isn't turned up too high -- medium low was hot enough on my stove. Any hotter and the breading will get too dark without cooking the inside of the chicken. Definitely a keeper! Used chicken tenders and put it on a salad, made a dressing of sour cream, lemon juice, hot sauce & bleu cheese. Perfect!

Banana Sour Cream Bread

This is the best banana bread recipe I've tried, ever! I did make some changes -- I substituted applesauce for 1/2 of the butter, used lowfat sour cream, and cut the sugar to ~1.5 cups (the applesauce & bananas sweeten this bread plenty). It turned out great -- like I just got it from Starbucks! Also, this freezes really well, just wrap in Saran wrap & foil, and put in a ziploc bag. Perfect! **BY THE WAY: Until recently, I thought my oven and I were a disaster with quickbreads (pumpkin, banana, etc) -- then found that buying brand new baking soda and powder makes ALL THE DIFFERENCE (thanks, Mom). You should replace it every year at least (look at the expiration date) -- now you know, too!

Beth's Spicy Oatmeal Raisin Cookies

These really are the best -- I made a batch for a bake sale, and they were so good, I made another for home. They freeze really well. I added 1/2 tsp ginger and 1/4 tsp nutmeg for even more spice, and take them out around 8-9 minutes. I'm making them again tonight and will try Craisins and chocolate chips instead of raisins. Definitely a keeper!

Butternut Squash Soup

I've never made butternut squash soup before, but I took the advice of others and also cut the cream cheese down to 4 ounces, and used neufchatel instead to cut some additional fat. I roasted the squash -- cut in half lengthwise, sprayed the cut side with PAM and roasted it, cut side down, on a baking sheet at 375 degrees for 45 minutes. This cut the boiling time in half and I think added some great flavor. Next time, I might try adding an apple to blend with it -- this is a very forgiving recipe. Even my husband, a very picky eater who doesn't like "adventurous" foods loved this and asked for seconds!! Even better as leftovers. Definitely a keeper!

Baked Basil Fries

This was a great recipe -- however, I am going to add some kosher salt to the mix next time, as it needed that extra boost of flavor. A keeper for baked fries, though!

Brazilian Lemonade

Made this last summer and LOVED it, got rave reviews at our summer parties...forgot about it until I was looking for a refreshing summer drink for our Memorial Day BBQ this year. Tried using a Splenda instead of sugar, worked great as a substitute. Will definitely be making this again!

Spinach Quiche

I followed the recipe to the letter (didn't have time to read the reviews on cutting back on the butter), and somehow managed to have a cup of egg mixture leftover, even with a deep dish pan...I don't know how I managed that. I think next time I will use less butter and spinach as it was pretty oily but went over great at our Christmas Eve brunch. Was great as leftovers for several days after too! So easy, I will make it ahead of time.
