Bada Bing Bada Banged Potatoes

These were so delicious and crispy, the smell when baking them in the oven really does make your mouth water. Before boiling, I cut the potatoes into cubes, lightly gave them a smash, coated them in the butter/oil and then added all the herbs. I only garnished with the parsley and left out the extra parm because I thought they were cheesy and awesome just how they were.

Microwave Caramel Popcorn

I made a half batch. I cooked the syrup for 1 minute, stirred, then three 30 second rounds, stirring between each round. I then added the vanilla extract and baking soda, heated it another 30 seconds and then added that to the popcorn. I only heated it an additional minute in the bag and it came out so light and crispy! My son (who never stops moving) actually sat down next to the bowl, stuffing his mouth. When I asked him if it was good, all he could do was mumbled "Mmmm-hmm!" through a mouthful. Great alternative to butter and salt!

Stuffed Beef and Black Bean Tamale Pie

YUM! I loved this recipe - easy ingredients and it came out so delicious. The only change I made was I used diced green chiles in place of the green onions. I mixed half the can into the beef and half into the cornbread. Also, since this recipe calls for only a 1/2 can of corn, I also just dumped the extra into the beef. Will be going into the monthly rotation!

Great Easy Waffles

Great recipe - worth the extra step of frothing the egg whites! These came out light and airy on the inside, crispy on the outside. My only complaint was my fault - they didn't have a lot of flavor but I didn't have any lemon zest so left it out.. I bet that would have made them divine!

Fluffy Pancakes

Fantastic recipe - nice to not have to worry about buttermilk. The only thing I recommend is swirling the batter in the middle once you pour it into the pan so it levels out and bakes more evenly. Great taste and simple ingredients, my 4-year-old wolfed it down!

Jalapeno Poppers I

I only gave these 4 stars a couple years ago, but I finally made them again and I don't know what I was thinking - 5 stars! Like last time, I didn't have cornflakes so I used a breadcrumb/ground oyster cracker combo. I also added 1T bacon bits to the cream cheese, though I couldn't really taste them. Crispy, creamy and delicious, couldn't ask for more!

Best Steak Marinade in Existence

YUM - I rarely use marinades but I bought a tough cut of meat and used this marinade for nearly 24 hours. I was unsure about the amount of basil that went in, and when the meat came out, I thought it smelled a little strange but when I took my first bite, I fell in love, haha. I didn't have any garlic powder, so I put in 2 tsp of minced garlic and I omitted the dried garlic. I'll also be putting more hot sauce in next time, maybe a full teaspoon. Definitely a keeper!

Spicy Black Bean Empanadas

I followed this recipe closely but I instead filled 12 Goya Premade Empanada Disks (baked 400 for 15-20mins) - I only had a tablespoon of filling leftover so it was perfect. I also used about a cup of frozen mixed bell peppers instead of fresh. My husband, who just yesterday said he has only ever heard of dessert empanadas and was unsure of savory ones, ate 5! Will definitely make this again.

Baked Teriyaki Chicken

I made this recipe without any changes and found it was the perfect amount for 6 boneless, skinless chicken thighs. I baked the chicken at 425 for 30 minutes, flipping once halfway through - tender and delicious!

Zucchini Bites

I was skeptical because of the amount of onion/veggies in here, but "wow" is all I can say! These were delicious (thanks bacon, haha). I'm not sure what size mini pan the recipe creator used, but I ended up with about 36 minis.

Ricotta Gnocchi

Can I just say that I now LOVE to make gnocchi? It was so fun to put together and what made it even better was that it froze so well. I just put them on a sheet tray to freeze for 20 minutes before popping them in a bag and today dinner took 2 minutes - doesn't get much better than that! This was my family's first time eating gnocchi and I have to say it won't be the last (:

Herb Roasted Pork Loin and Potatoes

Wonderful loin recipe! I often get dry pork and this came out nice and moist. I was running short on time so cut my 4lb loin in half, roasted both for 25 minutes then went another 35 minutes (probably could have pulled it after 25-30 minutes but my thermometer is off) after adding the potatoes. Next time I'll probably put the potatoes in for the entire time to get more of a crisp on them. Easy peasy (:

Herb Rubbed Sirloin Tip Roast

I used this rub on a top round roast instead of the sirloin tip roast and it was devoured! I was worried the meat would be tough but I followed the directions given here, sliced it thin and yum!

Chicken Pot Pie IX

This is just what I was looking for! The filling was nice and thick and the use of premade pie crusts made the recipe so easy. I made a few changes - no onions because my boyfriend doesn't like them. I just cooked the cubed chicken in the butter, removed the chicken and added the flour/chicken broth mixtures to the leftover butter. I let that simmer for about 15 minutes. Also, I added one small potato to the boiled veggie mix (everything cut in about 1/4" cubes). Didn't add the celery seed either, but no one seemed to miss it :) Thanks Roberta!

Peanut Clusters

I just made these for Father's Day and of course had to make a sample one for myself (: I used roasted, salted peanuts, semi-sweet and milk chocolate (since he doesn't like the peanut butter flavor much). Since I wasn't sure how much 12oz was, I started with 1.5cups though I think I ended up with about 2cups so it wouldn't be too runny. Overall, these were pretty tasty though I did get a few SUPER salty bites, but that had all to do with the peanuts. I may try this with Spanish peanuts next time.
