Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Delicious Egg Salad for Sandwiches

I used Ken's Perfect Hard Boiled Egg recipe which was great. Changes: I used 11 eggs instead of 8, though I only used 5-6 of the yolks. I also subbed sugar-free relish for the green onion. Overall nice and tasty. I was looking for a way to use up the Easter eggs and there it was on the front page :* Thanks!

Stuffed Beef and Black Bean Tamale Pie

YUM! I loved this recipe - easy ingredients and it came out so delicious. The only change I made was I used diced green chiles in place of the green onions. I mixed half the can into the beef and half into the cornbread. Also, since this recipe calls for only a 1/2 can of corn, I also just dumped the extra into the beef. Will be going into the monthly rotation!

Barbecued Beef Ribs for Two

My problem was with the meat suggested. I never tried making this type of rib and I didn't feel like the amount of meat was worth the effort. The sauce was delicious, but it seemed like there was only three bites of edible food per 2 bones. Will probably try the sauce with other meats.

Easy Cauliflower and Broccoli au Gratin

While the taste was good, the texture and heaviness after it cooled a few minutes was unpleasant to me. I give it 4 stars for taste and ease of preparation.

Herb Roasted Pork Loin and Potatoes

Wonderful loin recipe! I often get dry pork and this came out nice and moist. I was running short on time so cut my 4lb loin in half, roasted both for 25 minutes then went another 35 minutes (probably could have pulled it after 25-30 minutes but my thermometer is off) after adding the potatoes. Next time I'll probably put the potatoes in for the entire time to get more of a crisp on them. Easy peasy (:

Bada Bing Pork Chops

I didn't really care for the taste of these. The marinade was too bitter/tangy and every bite led to a bit of a grimace, lol. The only pro was my super thin chops came out nice and tender. I just pan seared them for about 1.5 minutes per side. Will be choosing a different recipe next time.

Bada Bing Bada Banged Potatoes

These were so delicious and crispy, the smell when baking them in the oven really does make your mouth water. Before boiling, I cut the potatoes into cubes, lightly gave them a smash, coated them in the butter/oil and then added all the herbs. I only garnished with the parsley and left out the extra parm because I thought they were cheesy and awesome just how they were.

Breaded Parmesan Chicken

Yes!!! I swear oven baked chicken breasts have been my enemy for years because they always comes out too dry or take sooo much longer to cook than expected (and then in turn are dry, haha), but these were so moist and flavorful! The only change I made was to pound the chicken out to about a half-inch thickness, and subbed garlic powder for the curry. Next time I'll be doing a 1.5 batch of breading since I was short this time, and also I may do half the Italian seasoning since it was pretty potent. Otherwise awesome and easy! Hubby and 4-year-old approved (:

Pepperoni Stuffed Zucchini

Eh, I am starting to think I am just not a zucchini person. I went ahead and added some salt and pepper while cooking the filling, and also added some to the zucchini shells before cooking. While the filling was pretty tasty, I couldn't stand the raw-ish taste of the shell. On to another low-carb side!

London Broil

I thought this recipe was ok, but I admittedly didn't have 3 of the ingredients (meat tenderizer, msg and tarragon vinegar). Aside from the tenderizer (it should be in the ingredient list! I would have bought some), I don't think I'll ever have the other two things in my pantry. I subbed soy sauce for the msg and some white vinegar plus marjoram for the tarr vinegar. The suggested cook time gave a perfect medium rare and the broil was still only slightly chewy, which was fine for this cut of meat. The 4 stars was mainly for the directions on how to prepare the steak. Overall I still prefer the "best steak marinade" recipe on this site for taste and convenience.

Ricotta Gnocchi

Can I just say that I now LOVE to make gnocchi? It was so fun to put together and what made it even better was that it froze so well. I just put them on a sheet tray to freeze for 20 minutes before popping them in a bag and today dinner took 2 minutes - doesn't get much better than that! This was my family's first time eating gnocchi and I have to say it won't be the last (:

Zucchini Bites

I was skeptical because of the amount of onion/veggies in here, but "wow" is all I can say! These were delicious (thanks bacon, haha). I'm not sure what size mini pan the recipe creator used, but I ended up with about 36 minis.

Peanut Clusters

I just made these for Father's Day and of course had to make a sample one for myself (: I used roasted, salted peanuts, semi-sweet and milk chocolate (since he doesn't like the peanut butter flavor much). Since I wasn't sure how much 12oz was, I started with 1.5cups though I think I ended up with about 2cups so it wouldn't be too runny. Overall, these were pretty tasty though I did get a few SUPER salty bites, but that had all to do with the peanuts. I may try this with Spanish peanuts next time.

Hot Buffalo Chicken, Bacon, and Cheese Sandwich

Fantastic sandwich - a real hubby pleaser! I only made 4 sandwiches so halved the amount of mayo and sour cream, but still put about 3T of hot sauce. I also added some sliced jalapenos between the bacon and cheese. I just used some hot dog buns, left them open-faced and heated them in the 350 oven for about 6 minutes. Yum!

Pineapple Sirloin Skewers

I had fun putting this meal together! I used London broil, fresh pineapple, red peppers and onions, skewered them on individual skewers (so I could be sure each item was done the way I like) and served over rice for my hubby and with Flat-Out bread for me. I put them under the broiler for about 3-4 minutes per side and unfortunately came out with pretty well-done meat, but otherwise it was very tasty! Will have to try this one again.

Buffalo Chicken Burgers with Blue Cheese Dressing

I made these with ground turkey under the broiler and they were so easy and tasty! I bet they would have been even better on the grill and I could have also stood a little more hot sauce for flavor.

Spanish Rice II

I liked this recipe but my hubby wouldn't touch it (because he saw the giant pile of onions during prep, grr!). 20 minutes of cook time would have been just right - I went 25 and it was kind of mushy. I also substituted about a 1/4 cup of diced "nacho" jalapenos in place of the green chilies since I only had plain diced tomatoes.

Key Lime Pie - Low Carb Version

Not very good. The gelatin made the cream cheese lose its creaminess. I thought I'd be eating something light and fluffy, similar to cheesecake, but it had a weird, thick texture and kind of a "salty" flavor. It was hard to eat one piece and that's saying something coming from someone who is stuck on a low-carb diet and adores dessert.
