Spinach Salad with Warm Bacon-Mustard Dressing

This was great as written. I added a tablespoon of the bacon grease to the dressing, probably would have been fine without it. Love it!

Creamy Macaroni and Cheese

Substitute 1 tsp ground mustard for the dijon, and everything else is great. Dinner was delayed because of an interruption, and the sauce thickened up a lot! So, don't worry if it seems soupy at first, it cools to a thicker sauce. The parm added more saltiness than I expected, but that may have been the brand. I suggest tasting while adding small amounts of it.

Hearty Breakfast Muffins

If I could give 2.5, I would. These had a lot of potential. Unfortunately, they come out super soggy and mushy. I felt like it needed more flour going in, but I stuck to the recipe (unlike pretty much all the other reviewers for this recipe.) I would say add at least another cup of flour. I know zucchini and banana breads are moist, but these were so moist that they almost seemed raw. I would try again, but add more flour, and possibly more spices ginger, cinnamon, and some vanilla extract. Also, another reviewer said she used 2-3 cups shredded zucchini as one zucchini's worth. I also have huge garden zucchinis and used 2 cups shredded. I would stick with that, as long as you increase the flour. The flavor combination was nice, we just didn't like the mushy middles.

Stuffed Zucchini

I made this as written, not cooking the meat before it is placed in the zucchini. It turns out similar to meatloaf in texture, but perhaps a bit denser. I used 2 garden zukes, each 8-9 inches long (bigger than your average store-bought zuke.) Using this size, Everyone ate 1/4 of a zuke, or 1/2 of each filled zuke. So, I got about 8 generous servings out of this, and it was the only dinner item, since it contained meat and veggies. It was very good and filling, and a new use of zucchini for me.

Kate's Kale Couscous

Wow, I'm sorry to leave this review. As the only one in the family willing to eat it, I give it 1 star. It is so dry, and not that flavorful. Since I'm eating the leftovers my family won't, I have added vinaigrette, which helps. But, although it's very healthy, I'd plan on a sauce, or skip it.

Smoked Salmon Dill Eggs Benedict

Wow...I can't believe this has so few ratings. It was great. I have to say, I had never had poached eggs or smoked salmon before this recipe. I loved it! The kids loved it. The husband loved it. It also took about 10 minutes total to make, which was awesome. Try to find a 10 minute meal as good as this. I have a feeling this might become a regular, and we're not the kind of family that has a rotation of meals. I need to work on my poaching technique, but I imagine that will improve with time. Don't be afraid of it, because even ugly eggs taste good. Add a nice vegetable to the side, and you've got dinner. Thanks for the recipe!

Ryan's Reverse Popper Dip

This is the recipe to use! I've tried others that have mayo, canned chilis, etc., but none of them compare to this one. It's perfect! It's fresh, simple, and great flavor. I took the seeds out of my jalepenos because I was bringing the dish to a party, but it wasn't hot at all, just had a nice flavor. Next time, I'll leave some of the seeds in and see how that is.

Philly Steak Salad

This salad is great! I usually just use sliced leftover grilled steak, added after sauteeing the onions and peppers. It's strange but so good. The kids call it silly salad because it has fries.

Vegetable Rotini with Dijon Cheese Sauce

This was weird, but oddly enough a few family members liked it. It has a really strong mustard taste, so you may want to adjust the amount to taste. I found the sauce a little gloppy and thick. I wouldn't make it again.

Dad's Cheesy Bacon Wrapped Meat Loaf

I loved the idea of the recipe. The first time, I wasn't thrilled with the outcome. The second time, I chopped the raw bacon and mixed it into the raw ground beef, and cut the cheese into large cubes (maybe 1/2 inch) and mixed those in. I cooked as directed, sprinkled some cheese on top at the end, and it was great. The bacon flavor permeated the meat, rather that just sitting on top, and there were little bursts of cheese throughout the loaf.

Chorizo, Potato and Green Chile Omelet

I was really surprised by how good this was. We had to make some minor changes. We subbed 4 whole eggs for the 8 egg whites, used whatever cheese was around, and par-cooked diced potatoes since there were no hash browns in the house. Everyone (even the picky kid and picky adult) loved it. Definitely keep the chorizo- I think that's what gave it so much flavor.

Avocado and Tuna Tapas

Rosemary Ranch Chicken Kabobs

We normally do not like boneless chicken breast meat. However, this recipe makes it great. The chicken comes out very moist and flavorful. I did decrease the salt to 1 tsp. I normally like my food salty, and 1 tsp worked for me.
