I am from a small town in Wyoming, not far from Jackson Hole. Unfortunately one of the down falls to living in a small town is you don't have much of a variety of places to eat out. Fortunately I love to cook, try new foods and new recipes.
My favorite things to cook
I love trying new dishes. For a while it will be Italian, then Cajun then Chinese. So I guess I love to cook everything and anything (oh, except bread).
My cooking triumphs
Home made tamales...YUMMY!!! (a friend even said it was like a party in his mouth) :)
My cooking tragedies
Seafood lasagna.........even thinking about it makes my hair stand on end! (our lab wouldn't even go near it!)

Amazing Italian Lemon Butter Chicken
Very yummy!! I did make a couple of changes. I seasoned the chicken breasts with salt and pepper and grilled them instead of frying them. I also pre-cooked my bacon in the oven (475 degrees for 20 min) Used 1/2 cup of butter and 1/2 cup of light margarine (ok probably didn't make a lot of difference but I felt a little less guilty when I ate it) And I didn't have any mushrooms. I will definitely make it again!

Spinach and Strawberry Salad
I thought this recipe was good. I did make a few changes though. I toasted the sesame seeds and decreased the sugar to 1/4 of a cup and used raspberry wine vinegar instead of the white wine vinegar. And I toasted sliced almonds to put on top. Yummy! Thank you.

Blue Cheese, Bacon and Chive Stuffed Pork Chops
I used feta cheese instead of blue cheese (husband doesn’t like blue cheese) and even though I am not a pork chop fan, these were tasty. Thanks!
