Chicken Pot Pie II

This is my new "go to" for pot pie; no cream-of-whatever-processed-soup involved. I used whole milk and the gravy was rich enough. Very yummy!

Chocolate Cake II

This will be my "go to" chocolate cake recipe from now on. I was a little skeptical with the amount of coffee but, once I tasted the cake, I was sold. I made a minor substitution; instead of vegetable oil I use extra virgin coconut oil. I used this recipe for the "groom" part of my "bride and groom" cupcakes for a work bridal shower and everyone commented on how moist the chocolate cake was. Great recipe, thank you!

Campbell's® Quick and Easy Chicken, Broccoli and Brown Rice Dinner

It is a good weeknight dish when you want something quick with minimal ingredients on hand. Just reading the recipe I thought it sounded pretty bland and "blah" like "food for the elderly" so I doctored it up by using only 3/4 can of the soup and mixing in 1/4 c light sour cream (you could use plain Greek yogurt instead, if you prefer). I cooked the rice before adding, since brown rice seems to take a little longer, and seasoned my chicken before cooking as well. It was a satisfying dinner; I took the leftovers to work with me the next day. Next time I may try one of the Philly cooking cremes as an add-in...

Gooey Butter Cookies

Living in St. Louis, if you have a great Gooey Butter cake recipe you always need to find a great Gooey Butter cookie recipe too. I made these for my sister after she gave birth to my niece and she said she (and her fiance) couldn't stop eating them...I couldn't either! It was a good thing I doubled the recipe because I don't know how many I ate just out of the oven! Thanks for sharing!

Gooey Butter Cake III

Apple Pie III

My boyfriend LOVES apple pie and this is now my go-to recipe for when I make one for him. When I'm pressed for time I just buy the pie crust instead of making it. Either way, the apple filling always turns out perfect. Thanks for sharing!

Cream-Filled Chocolate Cookies

I used the filling recipe to fill my cookies n' cream cupcakes. I crushed mini chocolate sandwich cookies and folded them into the filling mixture. The only reason I didn't give it 5 stars is: even though it is delicious it was a little too sweet. All in all I was happy with the results; thanks for sharing!!

Fluffy Pancakes

I wish I could give this recipe more stars! These are AMAZING! A great, simple recipe. I ran out of baking powder so I made the substitution (1 t=1/4 t baking soda+1/2 t cream of tartar) and had no problems. The batter was a little thicker than I anticipated so I added a bit of heavy cream which did the trick. I also added fresh blueberries I had in the fridge. They turned out perfect. This will be my go to recipe from now on and the best part of it is; whenever I'm craving some awesome pancakes I can save gas and money going to IHOP and just make these! Thanks for sharing!

Grilled Salmon with Avocado Dip

I actually only made the dip; I used a "southwest" flavored marinade i bought for the salmon. The dip was delicious...I even saved it for snacking with some tortilla chips :)

Basic Cream Cheese Frosting

Turned out perfect; very easy to make. I think i needed to add more confectioners' sugar to mine though because it was slightly runny but, my cake was still a little warm (in a hurry)...anyways, still delicious!

Quick Chili II

SO easy to put together! I added a can of fire roasted diced tomatoes to mine and left out the chilies (bf isn't big on chilies). It would be a great chili to go over fries and/or hot dogs too! I'm going to try that next :)
