Old-Fashioned Vanilla Pudding

perfect! temper your egg yolks good so you don't get (as one user said) scrambled pudding. i beat the egg yolks until they look lighter and have a creamier looking texture. then while vigorously whisking your yolks SLOWLY pour in ladles of the pudding. whisk the blankety-blank out of it and you should have non-lumpy, non-scramble egg yolks. i learned that from that guy on the food network. you know the one with the glasses and hair. you know who i'm talking about!

Amazingly Good Eggnog

great recipe! 1st time i've made eggnog. i wanted to make sure i got it right and looked at a lot of different recipes, tips and techniques. alton brown, from good eats suggest to first beat the egg yolks by themselves until they are lighter in color. he says this helps to keep the egg yolks from curdling later. i followed this tip and no lumps or curdling at all. he's sort of a scientific guy so he had a whole explanation for it. YUM!

Easy Pancakes

really good pancake recipe. like others, i only added a pinch of salt and 2 tsp. of baking powder. the amount the recipe called for just seemed like too much. they came out perfect when i made them with the changes.

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

excellent, outstanding and superb! we had this for christmas eve dinner with my parents and we all agreed that this recipe has won a special place in our family's traditional holiday recipes. i had no trouble with the cooking time. i thought i might, but it came out wonderful. the pan drippings were even a little bit over done. i did use a much smaller roast, about a 3 lb. i will be making this meal again in about two weeks when my brother comes in for a visit. next time i'll stuff the roast more and definitely make more sauce. i served this with a caprese salad, the recommended roasted onions and mashed potatoes. one last thought, the meal wasn't too heavy and didn't sit like a brick in my stomach like a lot of holiday meals tend to do. best christmas eve ever! 1/14/06 i made this again for a visit from my brother, his family and my grandmother and her husband. everyone raved (even the skeptics). this time i used 2 3lb. roasts and still the cooking time worked perfectly. we thought we might have leftovers, didn't happen.

Apple Crumb Pie

WOW! i made this for thanksgiving last year and it was excellent. both my husband and i thought that it was better than my mother-in-law's double crust apple pie that he's loved since he was a little boy. i used dark brown sugar for the topping to give it a little more of richer flavor. also, i highly recommend making a butter crust instead of a crisco crust. i think that was the key for making this pie as delectable as it was! i'll be making this again this wednesday for thanksgiving.

Creamy Rice Pudding

i thought this was pretty good. my two year old absolutely loved it. i improvised with what i had on hand which was jasmine rice. i omitted the raisins because i had none. i used half milk, half coconut milk and it turned out very tasty. i did sprinkle a little cinnimon on top for effect. i think this would taste heavenly with toasted coconut on top or even with some chocolate shavings on top. it would look pretty too. unlike some of the others i thought it turned out really great after a night in the fridge.

Spiced Pumpkin Seeds

everyone loved these, even my 2 yr. old. i used butter instead of margerine (healthier) and added some powdered onion as well. i imagine you could really get creative with the spices for this recipe. i did have to raise the oven temp at the end to speed up the cooking process and to crisp the seeds up a little more. i'm making these tonight and using olive oil this time.

Sweet and Sour Pork I

husband really like it!! pretty simple and i even had some tapioca starch laying around because of a different chinese meal i made one time. the only problem i came across is that the ingredients called for 1 egg but no where in the recipe does it mention to add any egg. anyhow, it turned out very good. i left out the tomato and added water chesnuts.

really great and super easy. i used butter instead of shortening to omit the hydrogenation and they turned out sooo good. i actually used them as pizza crust so i could make my son some lunch. it turned out deeee-lectable. much better than the store bought variety that have so much junk in them. i was at a hotel last week that had awesome biscuits on their continental breakfast buffet and these have got to be the same recipe! i did follow the suggestions from others and tried not to over handle them. also, i feel like i had to add a little extra flour.

Willie Cake

Woah!! this cake was so rich i could barely eat a sliver without getting a headache. my mom thought it was awesome but it was just too rich for my husband and i. i think the ganache was just a little over the top. maybe some powdered sugar sprinkled over the top instead of the ganache would make it less rich.

Potato Leek Soup I

this soup was good. my husband didn't seem too impressed. i enjoyed it but i doubt i'll ever make it again. i didn't think that it was "rich" at all. i cut down on the butter and the soup was definitely thick and creamy-ish but i wouldn't say rich. also, i used about 4 leeks and i'm glad i did because 2 just didn't seem like it would cut it.

French Toast II

i was skeptical when i first pulled these out of the pan but actually very tasty. my family loved them with some real maple syrup for father's day. i liked the added sugar which just lightly sweetened the toast. i left out the nutmeg because i thought it might be to much of a pungent flavor.

Emily's Famous Hash Browns

these hash browns were pretty tasty. my husband loved them for father's day with french toast and turkey bacon. a couple of drawbacks; they were pretty greasy because you use a lot of oil and they're somewhat of a mess to clean up. all in all i liked them but i rarely make hashbrowns and most likely i'll use a different recipe using less oil next time i make them.

Blackened Chicken

pretty good. i did not pound chicken because i had thin cutlets but i definitely would recommend pounding if you have thicker peices. i like spice so i made up some extra spice mixture to rub on the chicken. i finished this with bacon and colby jack cheese and ate it on a martin's potato bun. my husband really loved it.
