Christmas Cake

Update: I've made this recipe over 3 Christmas now. I've halved the flour quantity in order to have a more fruity cake. Will keep this one going. Yummy!As my partner is not a fan of the glazed cherries I used dried cherries (pretty expensive, but worth it!)and it tastes lovely.I'm pouring 2tbsp of Brandy on each cake every 2 weeks.I don't think it needs any icing either as it's delicious as it is.Hope it lasts till xmas.Thanks Carol!

Calamari

Very good. I reduced the flour a little & added 2 tbsp breadcrumbs.As suggested by some of the others I added more seasoning.1/2tsp lemon pepper,1/2tsp paprika & 1/2tsp onion powder.Cooking each batch for 2 - 2.5 mins was perfect.Thanks !

Play Dough Cookies

I think it tasted a little doughy after cooking for around 10 mins. They looked fabulous, but tasted just ok. Think I'll increase the quantity of sugar and bake 1-2 mins longer next time.

Cranberry Pistachio Biscotti

Just the right sweetness and crunch. And so pretty. Increased cranberries and reduced pistachios as other reviewers suggested.Didn't chop up pistachios.Having your hands wet to shape dough is a MUST.Impossible otherwise!The dough flattens out while baking so make sure they are only 2 inches wide and have enough height, or you might end up with stumpy biscotti! Mine got pretty wide while baking, but luckily I make the logs high. The next time I'll try to make make 3 logs out of same quantity.

Marshmallow Fondant

Tasted great and for it worked well. I think I prefer to roll it out on butter (instead of c.sugar) as it gives the fondant a lovely polished sheen. I also noticed that if you add color towards the end, using some butter when you knead the color in helps avoid a marbled look and gives a smooth spread of the color. I've tried to use this fondant to make figurines with no luck :( It's way too soft and doesn't hold the shape :(

Hot Bacon Asparagus Salad

Was a quick and delicious way to eat asparagus. I left out the salad greens and used 2 pounds of asparagus instead. I poached the eggs instead of boiling them and the gooey/runny york made it yummy with fresh baguette. A keeper :)

Eclairs II

The pastry came out fabulously.But it does make around 15 eclairs. As another reviewed suggested I only made half the quantity of the cream filling and it was just enough for the 15 eclairs.I also made a choc glaze instead of an icing using milk, chocolate, a tablespoon of butter and heaped tablespoon of icing sugar to sweeten lightly. We're waffling them down!Thanks

Oven Baked Jambalaya

I quartered this recipe for the 2 of us and have enough leftovers for one. I only added 1/3 of the tomato juices and used Cajun seasoning instead of Creole. The rice was just perfect.

Ninety Minute Cinnamon Rolls

Whoa ,,,, these were better than the clone of a cinnabon recipe ! They were more fluffy and gooey. I baked at 180 c for 19-20 mins on bottom shelf of oven. I made them the night before, let them rise, put in baking pan, covered and popped in the fridge till morning. In the morning it went straight from the fridge to the oven. Excellent ! T

Tabbouleh I

Very tasty and as even better the next day. I'd would reduce the olive oil quantity the next time. I didn't de-seed or peel the cucumbers. Just chopped them up. Healthy side dish or salad. Served with Shish Tawook from this site.

Marinated Flank Steak

I added 1T each Corriander and Cummin as suggested by another reviewer as I was using it for Fajitas. Marinated 24hrs. Broiled in oven for 7mins per side (medium). Somehow the marinade tasted better than the flavour it gave the meat itself. Overall was pretty good but I might try it with less vinegar next time.

Thai Chicken with Basil Stir Fry

YUMMMMMY! Tasted sooo authentic with the galangan (instead of ginger), sweet Thai basil and thai chillies. I doubled the sauce and it was perfect.

Banana Crumb Muffins

I used only 2.5 large bananas, oil instead of butter, added the cinnamon/nutmeg as suggested by many reviewers and got 12 large muffins.Baked for 20 mins. Excellent !

To Die For Blueberry Muffins

Yummy! As other reviewers suggested replaced the white sugar with brown for the struesel. Used frozen berries which were on hand and thus baked at 180 degrees celsius for 25-26 munutes. It made me 8 large muffins.

Hot Cross Buns I

These rose beautifully.After the second rising I popped them in the fridge and baked them the next morning. I brushed with apricot jam while hot to make them nice and sticky.Only complaint was they smelt a bit yeasty .... maybe more vanilla next time.

Baked Pork Spring Rolls

Pretty darn good :) As another reviewer suggested I replaced half the chicken with rice vermicelli and added 1 tbsp soya sauce. Cooked it all briefly on a low fire.I ended up eating leftover filling by itself, which I must say would make an excellent starter or salad to a Asian meal.

Ginger Veggie Stir-Fry

Simple, tasty and healthy. Used only broccoli. As another reviwer suggested sauted garlic & ginger. Added the broccoli. Then added soya sauce, a little white wine and bullion powder. Finally cornflour mixed in water.

Korean BBQ Beef (Pul-Kogi)

This was really good and simple to do.I added onions cut up in wedges, 1 grated carrot and the green onions to make it a complete meal.Didn't have rice wine so used white wine instead. Marinated only 1.5 hours and was still very tasty.Served with white rice and Miso soup.Will surely make it again and again.

Classic Tiramisu

This tasted GREAT,but my cream never really set into a thick creamy texture.Was still a bit liquidly at the bottom.Think it is vital to use full cream and not half cream (which I did) and to chill mixture for an hour or so BEFORE layering with biscuits.
