Blackened Tuna Steaks with Mango Salsa

The next time I'd half the quantity of salt as it was a tad too salty for our taste. Otherwise, great recipe.

Play Dough Cookies

I think it tasted a little doughy after cooking for around 10 mins. They looked fabulous, but tasted just ok. Think I'll increase the quantity of sugar and bake 1-2 mins longer next time.

Marshmallow Fondant

Tasted great and for it worked well. I think I prefer to roll it out on butter (instead of c.sugar) as it gives the fondant a lovely polished sheen. I also noticed that if you add color towards the end, using some butter when you knead the color in helps avoid a marbled look and gives a smooth spread of the color. I've tried to use this fondant to make figurines with no luck :( It's way too soft and doesn't hold the shape :(

Slow-Cooker Barbecue Ribs

We made this using veal ribs (tendrons de veau). My husband who loves spare ribs thought it tasted pretty good ! Like others suggested I used a bbq sauce which was on the sweeter/tomatoey side and thus completely omitted the ketchup. I used the rest of the ingredients as per recipe. I caramalised it for the last 45 mins in the crockpot by turning on to High and leaving the lid open. Will do again.

Red Velvet Cake I

On the day I baked it the cake tasted a 3.5 star. After leaving it overnight in the fridge it was pretty tasteless the next day. I did double the cocoa :-( Not sure what I did wrong.

Marinated Flank Steak

I added 1T each Corriander and Cummin as suggested by another reviewer as I was using it for Fajitas. Marinated 24hrs. Broiled in oven for 7mins per side (medium). Somehow the marinade tasted better than the flavour it gave the meat itself. Overall was pretty good but I might try it with less vinegar next time.

Oven Baked Jambalaya

I quartered this recipe for the 2 of us and have enough leftovers for one. I only added 1/3 of the tomato juices and used Cajun seasoning instead of Creole. The rice was just perfect.

Thai Chicken with Basil Stir Fry

YUMMMMMY! Tasted sooo authentic with the galangan (instead of ginger), sweet Thai basil and thai chillies. I doubled the sauce and it was perfect.

Stuffed Peppers for Two

Banana Crumb Muffins

I used only 2.5 large bananas, oil instead of butter, added the cinnamon/nutmeg as suggested by many reviewers and got 12 large muffins.Baked for 20 mins. Excellent !

Hot Bacon Asparagus Salad

Was a quick and delicious way to eat asparagus. I left out the salad greens and used 2 pounds of asparagus instead. I poached the eggs instead of boiling them and the gooey/runny york made it yummy with fresh baguette. A keeper :)

To Die For Blueberry Muffins

Yummy! As other reviewers suggested replaced the white sugar with brown for the struesel. Used frozen berries which were on hand and thus baked at 180 degrees celsius for 25-26 munutes. It made me 8 large muffins.

Hot Cross Buns I

These rose beautifully.After the second rising I popped them in the fridge and baked them the next morning. I brushed with apricot jam while hot to make them nice and sticky.Only complaint was they smelt a bit yeasty .... maybe more vanilla next time.

Baked Pork Spring Rolls

Pretty darn good :) As another reviewer suggested I replaced half the chicken with rice vermicelli and added 1 tbsp soya sauce. Cooked it all briefly on a low fire.I ended up eating leftover filling by itself, which I must say would make an excellent starter or salad to a Asian meal.

Ninety Minute Cinnamon Rolls

Whoa ,,,, these were better than the clone of a cinnabon recipe ! They were more fluffy and gooey. I baked at 180 c for 19-20 mins on bottom shelf of oven. I made them the night before, let them rise, put in baking pan, covered and popped in the fridge till morning. In the morning it went straight from the fridge to the oven. Excellent ! T

Ginger Veggie Stir-Fry

Simple, tasty and healthy. Used only broccoli. As another reviwer suggested sauted garlic & ginger. Added the broccoli. Then added soya sauce, a little white wine and bullion powder. Finally cornflour mixed in water.

Crispy Orange Beef

Excellent.In addition to incorporating other reviewers suggestions I did following. I only used 3-4 tblsps of oil to fry 300g of beef (significantly less that the prorated amount of arnd 1/2 cup). Used double the amount of fresh orange juice instead of orange juice concerntrate.

Thai Pineapple Chicken Curry
