Herb-Stuffed Red Peppers

Reviewed: Mar. 8, 2010
The only ateration I made was the addition of chopped garlic to the meat and onions. Really, it wasn't needed. I also added some pepper to the meat mixture. Other than that, I made it as published. It was a little more time consuming to prepare than I originally had planned, but it was worth it. A great recipe that will become a staple in our house.

Curried Coconut Chicken

Reviewed: Feb. 24, 2010
After reading many reviews on this dish stating it is bland, I think I may have figured out the problem. At the grocery store I found three different types of curry powder - Curry Powder, Spicy Curry Powder and Red Curry Powder. I did the following and found the flavors of the dish were very well balanced as did others who ate it last night: used 2 1/2 T Spicy Curry Powder, 1 whole medium onion, and only 1 T sugar. Other than that, I followed the recipe exactly. Oh, and I did simmer it uncovered for approximately 1 hour, stirring occasionally. I thought it was very good. I served it with brown rice, but will probably use white or jasmine next time.

Chilled Rice Salad

Reviewed: Apr. 4, 2008
Ok... I followed the recipe exactly, except I doubled it for a pot luck at work. Mine wound up looking nothing like the picture. Instead, it had the texture of Thanksgiving dressing - kind of mushy. As far as the taste, it was quite good. I loved it, but I didn't receive the compliments on this dish like I have on others I've taken to work. No one asked for the recipe, except for one person. It's a very savory dish in my opinion.

Many, many compliments when I made this cobbler and I even used frozen blackberries. Easy and delicious. Want to make again using blueberries.

Apple Pie by Grandma Ople

Reviewed: Nov. 22, 2007
Messy, but great. I followed the directions to a T and we loved every bite. I think the next time I make it I'll pour 3/4 of the mixture over the apples, then do the lattice and then top with the remaining mixture. Oh, I only used 7 apples as I thought 8 would be too many. Turns out I could have used the 8th one since the pie really cooks down. Even my mother said it was wonderful.

These are my new Lay's cookies... you can't eat just one! Fantastic. I followed the recipe exactly but added 1/2 cup chopped Macadamia nuts with the coconut.

Charline's Sweet Potato Casserole

Reviewed: Nov. 24, 2005
I also agree that this recipe is not clear when using raw sweet potatoes. I steamed them first then mashed and continued on with the recipe. The only changes I made were to decrease the sugar to 1 cup and only used 1/2 cup (1 stick) of butter. The topping I made as the recipe states. I will definately make this again as everyone raved about it and I thought the taste was perfect.

Slow Cooker Mashed Potatoes

Simplicity is the word with wonderful results. I had family here and made them at dinner. They were a huge success. Next time I may add bacon bits or even chives. I followed the recipe exactly.

Blackened Chicken

Have an outdoor grill??? Yes, it does create a lot of smoke in the kitchen so I fired up my grill and placed my cast iron skillet on the grilling rack. Cooks the same as on the stove but the smoke's outside. Thanks for the great recipe.

World's Best Lasagna

Reviewed: Nov. 29, 2004
It is the world's best. Not too hard to make and well worth it! Use 4-5 cloves of garlic instead of 2 and I did not use any salt. This recipe makes a lot. Next time I will make it in a 13 X 9 deep dish and use 3 layers of 4 noodles since there is enough meat sauce to handle that many layers. You may want to use a little more mozzarella cheese too. Also, the meat sauce makes a wonderful spaghetti sauce!!!

Chicken Savoy

Reviewed: Nov. 14, 2004
It's hard to find a 2 to 3 pound whole chicken in my neck of the woods -- they're usually 4 to 5 pounds. So, I used a package of 2.5 pounds of "split breasts" which worked wonderfully. Except for the chicken pieces I followed the directions exactly. A great recipe. Very tasty mixture of ingredients and extremely easy. I cooked it a little over 50 minutes and it was just slightly dry. Next time I'll cook it 45 minutes and it should be perfect. You won't go wrong with this one.

Libby's® White Chip Pumpkin Spice Cake

Reviewed: Dec. 2, 2003
I took this cake to a family gathering a Thanksgiving and everyone raved about it. I used 4 tablespoons of evaporated milk in the glaze instead of 3. I think the secret is to not stir it while it is heating to a boil. I know the recipe says nothing about stirring it, but I thought it might burn. Anyway, 4 tablespoons with just a little stirring worked just fine. This cake is very moist and delicious and I will be making it again very soon!

Here are some changes that make these muffins even better.... OMIT: sour cream ADD: 1 stick butter (room temperature), 1/2 cup chopped pecans INCREASE: white sugar to 3/4 cup. Preheat oven to 400 degrees. Cut orange in pieces and remove pits. In food processor, put in whole orange, o.j., egg, and butter. Blend for 3 to 4 minutes. Sift dry ingredients into a bowl. Mix in chopped dates. Add wet ingredients to dry and mix until just blended. Bake at 400 degrees F for 15 minutes. You'll love this even better!

Pumpkin Cream Cheese Muffins

I was dissappointed with the muffins. I took them to a Halloween party and there were quite a few of them left. I followed the recipe exactly. The muffins were good, but were not worth the effort. For a novice cook like myself, I found them to be somewhat difficult to make.

I was very surprised how good this was. I was very easy, but I'm not a cook and the recipe does not indicate how much butter to use. I used 3 T., but next time I'll use 4 T. This recipe is worth trying. I know you'll have it again and again, as I know I will.
