Corn and Cheddar Chowder

This was delicious with a few tweaks. It was a tad bit bland for us. I doublee the recipe and to it added another tsp of cumin (we love cumin) and added 1 1/2 tsp of paprika for a bit more flavor. I also removed bay leaved and used an immersion blender after the potatoes were done cooking prior to adding other ingredients. Made a smooth, thick chowder. YUMMY!

Banana Banana Bread

This recipe was delicious! I added crushed pineapple (drained) in place of some of the bananas, cinnamon and vanilla. Very moist and dense. WOuld be even better with cream cheese icing, which I will try next time.

Mint Chicken

While this chicken dish was light and refreshing, I found it lacking a bit in flavor. I added a seasoned salt while browning the chicken pieces and it gave it a bit more character. The dish was good and a hit with the whole family.

Old Fashioned Macaroni Salad

This recipe was excellent! I used a whole box of elbow macaroni, doubled the dressing and added approx. 1/4 cup of red wine vinegar! It received rave reviews!
