Chayote Squash Side Dish

Reviewed: Jan. 22, 2009
This was very good but I did change the recipe a bit. I had just returned from Guatemala and knew they never used vinegar but mostly lime juice. I replace the vinegar with lime juice. I also used 1/2 teas. of red pepper flakes and added 1/4 of a chopped onion. It had just enough bite to be great and the lime juice worked very well. It was a hit, will make it again. It makes a different vegetab;e side dish.

Coconut Cream Dessert

Reviewed: May 17, 2008
I was cooking a dinner for 75 people and wanted an easy dessert. My partner said that this was not going to be good and he hates this type of dessert. It was the hit of the dinner, everyone, including my partner said it was wonderful. It is so easy to do and the results are great. If you need a good dessert in a hurry, do this one.

Glazed Almond Bundt Cake

Reviewed: Mar. 22, 2008
I listened to others and cutr the vanilla and incrteased the almond extract. Also I decided since people were having trouble with the glaze to skip it. I dusted the cake with powder sugar, then made a lemon sauce and served it warm over the cake. It was a really big hit. The alomond and lemon flavor was outstanding. It is definitely a keeper.

Apple Stuffed Chicken Breast

Reviewed: Feb. 14, 2008
After reading the reviews, I decided to add raisins for added flavor. It really turned out to be a great dish and a recipe to use over and over.
