About this Cook
My husband and I try to maintain a healthy lifestyle. We don't eat fast food and try not to eat out too often... So I try to find conforting foods that I can make at home where I can control the ingredients. I've been known to scour this site or one of my many cookbooks for something we've been craving and try to make it a bit more healthy.
My favorite things to cook
I grew up eating Vietnamese food and love how light and fresh the cuisine is, but don't have the patience or time to prepare the dishes properly. Fortunately, I can head to a restaurant or even better--my parent's house when I have a craving. I tend to lean towards comfort foods, but always try to lighten them up as much as possible.

My cooking triumphs
I'm not a sweets type of girl so really do not enjoy baking all that much, but my hubby loves dessert...cheese cake, pie, cookies, ice cream-- I thought it would be nice to make him a treat and tried this "healthy" version of cinnamon rolls. I had never used yeast before and actually just received a rolling pin from my mother because the last time she was at my house and tried to make an apple pie, she had to use a glass to roll out her crust... I was a bit terrified, but they turned out to be delish!

Penne with Spicy Vodka Tomato Cream Sauce
Since I'm currently preggo, I left out the vodka, but still came out yummy! And so easy to make...

Key Lime Pie VII
I love this recipe. I use two cans of fat-free condensed milk & low-fat sour cream and it comes out perfectly every time!
