Easy Bean Salad

Burgundy Pork Tenderloin

This recipe was excellent, with a few modifications. I marinated the tenderloin in wine, Montreal steak spice and garlic powder for about an hour before. I used 1.5 packages of gravy mix and added baby portabella mushrooms. Delicious!

Absolutely delicious! I only made a couple changes, I used 1 cup of clam juice instead of water, added a couple extra cloves of garlic, some dried chilis and some fresh Pacific Northwest salmon. We had company that evening and everyone raved for hours about how good it was. This is a new favourite for us!

Delicious but I marinated the meat overnight and served with tzatziki sauce over it and rice. Used leftover tzatziki for dipping with pita. A huge hit with the in-laws.

Classic Bran Muffins

First time I followed the recipe and they were very good but I've since made a few changes that I enjoy even more. I use lowfat milk and a tbsp lemon juice instead of buttermilk, 1/4 cup veg oil, 1/4 milled flax seed and whole wheat flour instead of AP. Cinnamon adds a nice flavour. I've also added mashed banana at times or apple sauce.

Yam and Apple Casserole

I've been making this recipe for the last few years for Thanksgiving and have tweaked it a little over the years. Here are my changes that have garnered rave reviews from friends and family: cut the sugar down to 1/4 cup, use orange juice instead of apple, omit lemon juice. Drizzle pure maple syrup on top and sprinkle with candied pecans. Delicious!!!

Apple Pie by Grandma Ople

Fabulous base recipe! I did make a few changes. I used 1/4 cup brown sugar and 1/4 cup maple sugar instead of 1/2 cup brown sugar. I also added vanilla, cinnamon and a dash of nutmeg. I pour most of the sauce into the pie before adding the top crust and use the reserve sauce for brushing over the lattice. If the sauce thickens too much to brush on, then I add a few drops of water to it. I have had several requests from friends asking me to make one for them and even had one friend tell me she had a dream about my pie. lol. Thanks Grandma Ople!

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

I cut out the olive oil and baked the garlic cloves in aluminum foil for 30 mins at 350. I have made this many times and everyone has loved it!

Old Fashioned Strawberry Pie

I also found it needed the cornstarch (3 tbsp.) and less cinnamon (1/4 tsp.) but other than that it turned out great. I also omitted the butter and found it delicious without it. Great basic recipe.
