American Lasagna

Reviewed: May 20, 2004
This was a nice dish, but I would have liked a little more zing and flavor. But then, I guess that is why it's called American lasagna:-)

Musaka

Reviewed: May 20, 2004
I served this recipe to a group of Turks and Bulgarians. I didn't tell them what I was making and I am American, so when one of them took a bite and said "Oh my god! You made Mmusaka!" I could not have been more pleased. One lady didn't even believe it was my first time making it. The thing is that I ended up adding about three times the amount of paprika and twice the cumin and cayenne pepper in order to make it come out with what I consider enough flavor. But then, I (and most Bulgarians and Turks) like strong flavor. Next time I will also add about three times the Chubritsa (summer savory) which I found at a mediterranean grocery store, because I could not taste it at all in the dish. I boiled the potatoes for about 15 minutes before cooling them in cold water, then peeled and cubed them. I used about 12 ounces of plain homemade tomato sauce. I drained the meat after cooking and found the amount of olive oil called for in the recipe to be way too much; 2 tablespoons is plenty for browning the beef. I also added a little less water to the mix prior to baking. Even though I had to modify the ingredients significantly, I am going to give this recipe 4/5 stars because my Turkish boyfriend is still bragging to all his friends about my cooking because of it:-) One more note: the Turkish version of this recipe definitely calls for eggplant, which can be bought sliced and canned from wherever you buy the chubritsa. Thanks for sharing this recipe Lisa!

Creamy Rice Pudding

Reviewed: May 20, 2004
I did not get rave reviews on this recipe. I thought there was too much rice.

Black Bean Hummus

Reviewed: May 20, 2004
I found this recipe to be quick and worth a try, but I will be careful to follow it more closely next time and use less tahini. I also think there are not enough herbs in it and that a bit more cumin or something may have helped.I will probably make this again.

Fava Bean Breakfast Spread

Reviewed: Aug. 4, 2003
This is a great and simple recipe that has a lot of versatility. I found the parsley to detract from the dish, however, and will take another poster's advice on putting in some garlic. I didn't have pita bread so I substituted with flour tortillas, and it was better than you'd think. I had a really tough time finding fava beans, for some reason. Nobody at the store know what they were and I asked five people! Thanks for sharing this yummy recipe!

Jamie's Cranberry Spinach Salad

Reviewed: Aug. 4, 2003
I followed this receipe very closely. Both my husband and me thought the vinegar overwhelmed the taste of everything else and made the salad to sweet overall. Next time I make this I will find a ligter oil to add more of and reduce the vinegar by about 75%. Otherwise, this actually was a tasty salad and I hardly even realised I was eating spinach-a plus in my book! If you plan to keep this over one day, keep the spinach and cranberry mix separated from the dressing. I think this could be a great way to get kids to eat their spinach (kids like me)! There is anothr salad recipe on this website called strawberry and spinach that I plan to try and post a review of soon.

ABC (Absolute Best Chewy) Chocolate Chippers

Reviewed: Aug. 4, 2003
This is a decent cookie recipe and does indeed produce a chewy cookie. That is, unless you overbake. Contrary to the submitter's suggestion, I found the ideal baking time to be between 12.5 and 13.5 minutes. Anything longer than that and the cookies turn pretty hard after a few hours. Hint: if you start to see the cookies browning, get them out of the oven. Also, I though the recipe called for a little more salt and definitely more chocolate chips. I found the corn syrup to be needless after baking a second time and would add just a bit more white sugar instead next time. This is an excellent recipe in the fact that it does produce a wonderful and balanced texture. I ended up with 40 cookies and were eaten by my husband and I alone in 4 days!

Kielbasa and Cabbage

Reviewed: Jul. 28, 2003
I did not like this and only ate it because I went to all the trouble to cook it. It was bland and greasy and I can't think of any way to improve it. I found the total prep and cook time to be about an hour, making this definitely not worth the time. My husband liked it, though, so I'm giving it an extra star.

Fresh Strawberry Pie I

Reviewed: Aug. 26, 2001
This would be a good recipe except for the fact that the filling is not enough. I had to take off a star for this. You shouldn't have to alter a recipe to make it come out right, so I gave it 3 stars instead of 5.

Hungarian Mushroom Soup

Reviewed: Aug. 4, 2000
This was very yummy! I wanted to make something European because my husband is from Romania, and this soup really hits the spot. It's actually classified a sauce over there, but it was yummy all the same. I also added about a pound of boiled, chopped chicken right after adding the broth, and it worked out very well. I also added just a little authentic spicy paprika to give it a little spicy-hot zing. But the recipe works well as it is-there were just some additions of my own. I recommend it. Children may need to acquire a taste for it, however.
