Super Summer Kale Salad
For the folks who find traditional kale bitter, try using lacinato kale (also known as Tuscan kale). It is much better suited to be eaten raw and stands up well to dressing. I was able to find it at Whole Foods Market. If it still isn't palatable for you, baby spinach and arugula mixed would make a wonderful substitute.

Vanilla Glaze
I am rating this a 5 based on other folks suggestions: I used 1 tbs. of butter, 1 tbs. of corn syrup and 1 tsp. of vanilla. I omitted the salt. I started with 1 tbs. of milk and added more until I got the consistency I wanted (I would guess a total of 2 tbs of milk). I also sifted the confectioners sugar prior to adding the other ingredients to ensure there were no lumps. It came out beautifully - glossy and rich.

Real Mississippi Mud Pie
This was absolutely fabulous. I followed others recommendations and added 1 tsp. of instant coffee, 1 tsp. of vanilla and dusted the nuts with flour. For my own personal taste I used (4) squares of semi-sweet chocolate and (2) squares of bittersweet. It was dark, rich and decadent. I also served it with fresh sweetened whipped cream. Will be making it with pecans today, may try it with macadamia nuts too.
