Chewiest Brownies

Very good but not as chewy as I would've expected given that they're supposed to be the 'chewiest'! The edges were nice and chewy though, and the flavor was very chocolatey. I added some instant coffee too. Will make again.

Can't Tell They're Low-fat Brownies

Pretty good! I used a mashed banana instead of the prunes since I didn't have any and decreased sugar to 2/3 cup. You can certainly tell they're low fat but they're good in their own way, moist and chocolatey. They turn out rather thin, I would make 1.5 times the recipe and maybe then they'll be a better thickness. Also I think adding just a few chocolate chips would make them really good ;)

Deep Dark Old Recipe Bran Muffins

HOLY YUMTASTIC!!!! By far the best bran muffin I've ever had, will need to be buying bran by the truckload now haha. I actually omitted the sugar and oil, and added in a shredded apple to make up for it in terms of moistness. They were fantastically moist and tasty. Will make again and again.

Banana Pancakes I

Scrumptious! I LOVE bananas and you really get the banana flavor in these! Added some cinnamon, didn't bother with the sugar and oil, bananas are sweet enough on their own. SO GOOD, will make again and again. Edit: I tried these with 1/4 cup cocoa subbed in for some of the flour = banana chocolate yumminess!! I have made these several times now and find they are fluffier and less 'wet' on the inside if you cook them real slow and add about 1/2 tsp baking soda!

Bannock

Mmmmm, I have tried making bannock in the past without much success but this recipe is great! The dough was VERY sticky, but I figured since I followed the directions, it was supposed to be like that. I baked it in the oven in a 9x9 pan. Got nice and puffy and turned out perfect! Can't wait to make it again!

Very yummy! I made it 1/2 whole wheat and it turned out great. it turned out with smaller bubbles than I'd hoped for but it was still fantastic. Perfect for toasting with PB & J!

Carrot Cheesecake Muffins

Yum! Very tasty. Tons of batter, I made 12 muffins (filled to the top) and still had extra batter to make about 10 minis. Filling is really yummy! A bit long to make but totally worth it once in awhile. I had no evaporated milk so just used regular and they turned out fine!

Traditional Bakewell Tart

YUM! I've always wanted to make one of these, and it did not disappoint. I made 12 minis actually, in a muffin tin. I probably used a thicker layer of jam than in the recipe. I also added almond extract to the cake part, only because I like it like that, but it would have been good without! Yumyum, will make again!

Pumpkin Corn Bread

Delicious! I thought these would be mediocre, but I wanted to try it out. WOW, the texture, moistness, and density is so perfect! So tasty too, but I added some spices for the more pumpkin-like fall taste. YUM!

Grandmother's Buttermilk Cornbread

Mmm, very good. I was looking for a recipe with at least the same amount of cornmeal as flour, because I like them crunchy. Made this into muffins, baked 20 mins, and they were yummy and moist. Now I'll always use this cornbread recipe!

Raspberry Coffee Cake

Yumyum so good! I melted the margarine so it would be easy to add to the wet ingredients. Used a mixture of frozen peach, mango, and strawberries because that's what I had. Added a little cinnamon and ginger too, because I felt like it. The batter was a bit thick so I just thinned it a bit with water, didn't seem to be a problem. Took out my 9x9 pan but it didn't look like there was enough batter for it (didn't have an 8x8) so I made 9 cupcakes! With the glaze on top they turned out really moist and sweet and yummy. Will make again!

Ruth's Grandma's Pie Crust

I'm usually REALLY BAD at making pie crust, so I just get store-bought, but this time I was making a pie and didn't have any crusts. So I made this and it was SO EASY to make and roll. Tastes great too. I used 1/2 the recipe and used it for 1 pie. Had some leftovers and baked them up, so tasty. This will be my pie dough recipe from now on, and I will no longer be afraid of making it!

Dutch Apple Pie with Oatmeal Streusel

Very good recipe. I used 1/2 of Ruth's Grandma's Pie Crust recipe and made a deep dish pie in one of those cheesecake pans with the sides that come off. Maybe because it was deep I had to bake it for about 50 minutes. Mine seems like it could have used a bit more thickening but I really can't complain because I'm usually pretty bad at making pies!
